    Ingredients You’ll Need

    One of the perks of this peanut butter protein fudge is that you only need five ingredients, almost like this coffee fudge recipe which requires just six and tastes like a latte.

    Because this fudge recipe isn't a traditional one (this is freezer fudge) you also won't need ingredients like unsweetened almond milk either.

    If you have a well-stocked gluten-free food pantry staples, you’ll be set.

    Coconut oil: I like to use cold-pressed, extra virgin coconut oil but it does have a bit more of a coconut taste to it to some people. Opt for un-refined at the very least.

    Natural peanut butter: you need the natural version for this protein fudge recipe so that it creates a smooth texture (same goes for these chocolate chip protein cookies). Also, try to use fresh peanut butter so that it mixes better.

    Collagen powder: one of the cleanest sources of protein out there. Collagen is what gives this dairy-free fudge its protein boost.

    Honey: not only does the honey sweeten the fudge but it also helps with the texture. Opt for regular raw honey or creamed honey.

    Coconut cream: you want the thick, white cream that comes from the can. Make sure to drain the water and use only the cream.

    How To Make Protein Fudge

    1. Combine the coconut oil, peanut butter, and honey in a small pot.
    2. Heat on low heat until the coconut oil is melted.
    3. Quickly whisk in the collagen powder and then the coconut cream.
    4. Whisk until smooth.
    5. Portion into silicone molds and pop in the freezer for 2 hours.

    Important Teaching Tips

    To eat the protein fudge, let it sit at room temperature for 5-10 minutes so that it’s soft.

    Make sure to heat the ingredients on low and be patient. Otherwise, the peanut butter may burn and make the mixture chunky.

    Whisk in the collagen with a fork really quickly while everything is warm. This way it doesn’t have a chance to clump.

    If making this in one long silicone mold, run the knife under warm water before slicing the protein fudge into squares.

    How To Store It

    Store the protein fudge in the freezer for up to 6 weeks (if it lasts that long!).

    Let it sit at room temperature for 5-10 minutes before enjoying it.

    If you store it in the fridge to thaw overnight it's delicious but just a bit too soft.

    Frequently Asked Questions About Peanut Butter Protein Fudge

    How do you store protein fudge?

    Because peanut butter fudge requires no tempering, it’s best stored in the freezer until you’re ready to eat it.

    Can I put my fudge in the freezer to set?

    Fudge that has not been tempered should be placed in the freezer to set. Setting in the fridge will take hours where as most fudge in the freezer takes only 60-90 minutes.

    How long does protein fudge last in the freezer?

    Freezer fudge can last 2-3 months in the freezer so long as it is in an air tight container in which it can’t get “freezer burn” on it.

    Can I use chocolate protein powder in place of collagen powder?

    Protein powder and collagen powder do not mix or absorb liquid in the same way. Though whey protein powder may be able to be used, vegan can most definitely not be swapped in. Vegan protein powder tends to absorb a lot of liquid and would leave this protein fudge with a thick but chalky texture.

    Can you make this into vegan protein fudge?

    The honey in this recipe helps to sweeten it but also with the texture and binding of the fudge. So, using maple syrup won't work.

    Can I add chocolate chips?

    You can add chocolate chips to the peanut butter fudge for a fun twist! However, make sure to add the chocolate chips after pouring it into the mold when it has cooled ever so slightly. Otherwise they will just melt.

    Ingredients
      

    • 2 tbs Coconut oil
    • 2 teaspoon Coconut oil
    • ½ cup Natural peanut butter
    • ½ cup Collagen powder
    • 4 tbs Honey
    • 2 tbs Coconut cream
    • Pinch Salt optional

    Instructions
     

    • In a small pot, warm the oil, peanut butter, and honey over low heat.
    • Remove from heat when coconut oil is just melted.
    • Quickly whisk in the collagen powder and coconut cream until no clumps remain.
    • Portion the fudge mixture into either a baking loaf lined with parchment paper or mini silicone molds.
    • Sprinkle on a pinch of salt.
    • Place in the freezer for at least one hour or until completely solid.
