  • In a small pot, warm the oil, peanut butter, and honey over low heat.
  • Remove from heat when coconut oil is just melted.
  • Quickly whisk in the collagen powder and coconut cream until no clumps remain.
  • Portion the fudge mixture into either a baking loaf lined with parchment paper or mini silicone molds.
  • Sprinkle on a pinch of salt.
  • Place in the freezer for at least one hour or until completely solid.

Notes

  • Make sure to heat the ingredients on low and be patient. Otherwise, the peanut butter may burn and make the mixture chunky.
  • Whisk in the collagen with a fork really quickly while everything is warm. This way it doesn’t have a chance to clump.
  • Though regular peanut butter is great, crunchy peanut butter is amazing.
  • You can pour the protein fudge recipe into a baking loaf lined with parchment paper or mini silicone molds.
  • Know that the thicker the fudge in the mold, the longer it will need to set.
