Dark Chocolate Pomegranate Bark (7 ingredients, Paleo)

Made from scratch, this dark chocolate pomegranate bark is bursting with flavor and healthy perks. With so many health benefits of pomegranate, it would be silly not to work them into your diet. And what better way than with an extra dose of chocolate! This chocolate pomegranate bark is simple to whip up and contains only seven real food ingredients. It’s a wickedly delicious, dark chocolate indulgence.

This dark chocolate pomegranate bark is both indulgent and refreshing. It comes together quickly (only seven ingredients) and is literally bursting with flavor.

While it’s not one I tend to take with me to a party (it does melt if left out too long), I like to have some on hand for myself over the Christmas season for a quick, festive indulgence.

Plus, the benefits of pomegranates are well worth a chocolate treat 😉

The Benefits Of Pomegranates

Like anything so pure and potent in color, pomegranates have a lot of health benefits. Which means having them on hand can be a major win. And while I do love this chocolate pomegranate bark, if you’re looking to reap the benefits of pomegranates specifically, you don’t want to always be combining them with sugar 😉 Opt for the real thing too.

  • Pomegranates are high in antioxidants
  • They contain anti-inflammation properties
  • Loaded with Vitamin C
  • They can help reduce joint pain
  • Lower your risk of heart disease
  • A Vitamin-rich health booster

Pomegranates are potent antioxidants and loaded with Vitamin C. These two nutrients can help with just about every function in your body. So, getting a boost in them is always a bonus. Blueberries, cacao powder (learn more about why I recommend cacao powder to everyone!), and now pomegranate seeds should be a staple in a healthy house. 

Apparently, there’s also been some studies on both prostate and breast cancer using pomegranates to help slow and in some cases help kill cancer cells. This is beyond amazing. Obviously more studies are needed but overall, it’s a positive start and a neat avenue to pursue.

Likewise, the benefits of pomegranates include helping with joint pain. This is a common one with most healthy foods. Personally, I think that the truth is all major superfoods have this ability because plant-based foods contain so many things good for us. Since the majority of nutrient-dense foods contain antioxidants, it’s easy to see why there would be anti-inflammatory.

 

How To Open A Pomegranate

I’m well aware that this is one of the areas that stop people from using pomegranates more frequently. It took me years to find a system that didn’t bathe my kitchen in what looked like blood or stain my clothes.

While, I look like a crazy person getting the arils out, using a wooden spoon is effective. Peep the video for the best way to de-seed a pomegranate.

Once I learned how to de-seed a pomegranate, I use pomegrate arils all the time in:

  • smoothies
  • salads
  • yogurt parfaits

 

How Sweet Is The Dark Chocolate Pomegranate Bark?

When it comes to the chocolate pomegranate bark recipe, it is most reminiscent of dark chocolate. Because the chocolate pomegranate bark uses cacao powder with minimal sweetener, it comes off around an %80-85 dark chocolate flavor. Indeed, cacao powder is the healthiest form of chocolate you can purchase. In addition, it has more antioxidants than blueberries, it’s loaded with calcium and iron, but it’s also processed very little.

If you wish for a sweeter taste, use cocoa powder in place of cacao powder (yes, they’re two different things!). Cocoa powder is slightly more processed than cacao. Thus, it’s naturally a bit sweeter as well. Cocoa powder is found in bulk at Costco for a killer price if you’re a member. It’s one of our staple Costco buys too.

I would also add in some stevia if you’re looking to make the chocolate bark recipe sweeter.

 

How Do I Store The Dark Chocolate Pomegranate Bark?

This chocolate bark recipe needs to be stored in the freezer. Because it is coconut oil-based, it will melt if left at room temperature for more than fifteen minutes or so. However, this makes it all the more refreshing when you indulge in the chocolate pomegranate bark because it’s slightly chilled.

If you know you’re not going to be consuming it immediately, let it sit in the pan until you are. Once broken into pieces the dark chocolate bark is delicate and will break easily.

Ingredients In The Dark Chocolate Pomegranate Bark

  • 1/3 cup coconut oil
  • 1/8 cup cacao powder
  • ¼ cup pomegranate arils
  • 2 tablespoons cacao butter
  • 1/8 cup raw honey
  • 1/8 teaspoon sea salt

How To Make The Dark Chocolate Pomegranate Bark Recipe

First, in a small pot, heat the coconut oil, honey, and cacao butter over low heat. Turn the heat off as soon as melted.

While heating, line an 8/8 pan with parchment paper.

Second, when melted, whisk in the cacao powder until no clumps remain.

Stir in the pomegranate seeds.

Then, pour the mixture into the lined baking pan making sure the pomegranates are spread out evenly.

Finally, sprinkle the sea salt over the top of the mixture and pop into the freezer for thirty minutes.

When ready to eat, break apart the bark and enjoy it!
