Step 1: Place the coconut milk into a high-powered blender like a Vitamix. Add the frozen mango on top.

Step 2: Blend and use a tamper to help you. You may need to pause and scrape the sides.

Step 3: Blend until the ice cream mixture is completely smooth.

Step 4: Serve as is in bowls or transfer it to a freezer container for 30 minutes for a bit more firmness.

You cannot use fresh mango for this recipe, as it isn't thick enough and will result in a smoothie-like texture, not an ice cream.
You want the "coconut cream" from the can of coconut milk. Know that the thick white part is the "coconut cream," and it should be semi-soft or solid and not liquid. The high-fat in this is what keeps the mango ice cream creamy and not icy.
Serving and Storing
This healthy mango ice cream tastes best freshly made. In fact, it will have a thick, scoopable texture. If you find it too soft, place it in a loaf pan in the freezer for 10 minutes to firm up.
Store leftovers in an airtight container in the freezer. It will become harder and a bit more flaky with ice crystals once it's stored. Before serving it again, reblend it to bring back its soft texture.
