When the weather heats up, I’m all about freezer snacks that feel like a treat but still keep me full (like homemade protein ice cream bars obviously. These protein s’mores are creamy, chocolatey, and packed with protein, making them perfect for curbing cravings in the summer.
They’re basically a freezer-friendly twist on classic s’mores made with layers of graham crackers, fluffy protein filling, and melted chocolate. The best part? They’re completely no-bake, ridiculously easy to prep ahead, and perfect for those nights when you want something sweet without turning on the oven (protein peanut butter cups work too!).

💭Why You'll Love This Recipe
Texture: The gluten-free frozen s’mores have an almost chewy texture with a bit of crunch from the hardened chocolate on the base. Not fully frozen solid but utterly refreshing. The whipped cream keeps the centers nice and airy.
Real life prep: Just like protein popsicles recipe, this recipe is a great one to whip up in the summer months and just keep in the freezer for snack attacks in the heat.
Flavor combo: The no-bake s’mores have all the nostalgic flavor you’d expect from a summertime dessert but in a creamier, protein-packed way.
Ingredients and Substitutions

- Coconut oil: You need this oil in place of a neutral one as it helps to harden the chocolate once chilled. Similar to a caramel magical shell.
- Graham crackers: I use Kinnick graham crackers to keep the healthy frozen s’mores gluten-friendly but if this isn’t needed for you, just use regular ones. You could try using keto graham crackers with almond flour, too, for a homemade option.
- Whipped cream: Obviously, being dairy-free, we use coconut whipped cream but whatever you have will work. Cool Whip is an option too, if you prefer that.
- Protein powder: The kind you choose will affect the taste and texture of the frozen s’mores. For best results (and amazing health perks), use Equip Protein.

Flavor Variations
Below are a few fun flavor swaps we’ve tried to keep the recipe exciting and “new”.
- Protein powder: The easiest variation of all, try using a cookies and cream or chocolate protein powder for a fun switch.
- Peanut butter cup: Swirl some peanut butter onto the graham crackers and use a chocolate protein powder. This is a kiddo favorite, and why we also rely on regular no bake s’mores cups for potluck desserts.
- Mocha: If you love a coffee-flavored dessert, sprinkle some espresso powder into the whipped cream protein mix.
How To Make Frozen Protein S'mores

Step 1: Layer half of the graham crackers in a lined baking dish.

Step 2: Melt together the chocolate chips and coconut oil before pouring a layer over the graham crackers (making sure to save some). Chill briefly.

Step 3: Mix together the whipped cream and protein powder and smear it over the chocolate graham crackers.

Step 4: Layer the other graham crackers on top of the protein filling.

Step 5: Drizzle with the remaining chocolate and place in the freezer to set.
Expert Tips
The beef protein powder absorbs into the whipped cream quickly and thickens it. So, you either need to move quickly or reserve some of the whipped cream to “fill out” any uneven spaces.
The kind of protein you choose matters. First off, make sure you love the flavor because it does shine through quite a bit.
- Beef protein is my personal favorite (learn why I switched to beef isolate protein). However, it is sticky when it absorbs so you either need a bit extra whipped cream or have to move quickly. Equip Protein has the best beef protein and insanely delicious flavors. Use code mamabear to give them a try.
- Whey protein will absorb easily into this mixture, and you’ll have a lighter texture.
- Vegan protein will work but give you a thicker texture throughout the middle that could end up a bit gritty, as it rarely blends as nicely.
Don’t overmix the whipped cream and protein powder. Stir just until combined so the filling stays light and creamy.
How To Store Them
This no-bake treat should be stored in the freezer until you’re ready to enjoy them. Once sliced, store them in layers separated by pieces of parchment paper and in an airtight container or bag. They’ll stay fresh for up to 3 months.
We enjoy our frozen s’mores right from the freezer in cold, crunchy bites. However, if you prefer a slightly softer texture, let your s’more thaw on the counter for about 5 minutes before enjoying.
Frozen Protein S'mores FAQs
Yes, frozen s’mores will harden a bit given that coconut oil is used in the chocolate and whipped cream does freeze. Right from the freezer, they’re crunchy but they will soften a bit if you let them sit out a bit.
Any protein powder can be used to make frozen protein s’mores. However, each one will change the taste and texture of the recipe.

- Add a layer of graham crackers on top, or if you don't have enough, crumble them.
- Drizzle the remaining chocolate on top and pop it into the freezer for 30-60 minutes to set.
