    Made in a blender: Skip the mixing and ensure everything is combined. All you have to do is pop everything in a blender.

    Pouring: Even though I love my paleo pumpkin waffles, I truly dislike portioning the batter. These easy blender waffles mean I can pour the batter into the waffle iron, and it’s less effort and mess.

    Yogurt based: Being yogurt-based means that you get a natural protein source, keep the waffles low in calories, and achieve the best balance of golden crispy.

    Ingredients and Substitutions

    • Greek yogurt: The blender waffles recipe works best with a Greek yogurt, as it helps thicken everything up. I personally use a dairy-free Greek yogurt (this is what I use for Greek yogurt protein pancakes, too), but use whatever suits your dietary preference.
    • Gluten-free flour: Opt for baking flour so that the waffles rise up. All-purpose flour tends to work pretty well, too, but will result in a bit thinner waffles.
    • Mix-ins: My one kid is chocolate obsessed, so we add chocolate chips more often than not to ours. However, fruit, nuts, or anything else you can think of works as well.

    Double chocolate: Add 1 tablespoon of raw cacao powder to the dairy-free waffle batter along with chocolate chips to mix in for a rich chocolate taste.

    Fruity: Mixing in fresh or frozen fruit, or blending something like a raspberry compote recipe into the batter gives a pop of freshness.

    Extra protein: Since dairy-free yogurts (even Greek) tend to slack on protein a bit, I like to add collagen powder when making these for myself (learn more about what collagen powder is).

    How To Make Blender Waffles

    Step 1: Place all the ingredients (except chocolate chips) into a blender or food processor.

    Step 2: Blend until combined.

    Step 3: Pour into a pre-greased and heated waffle iron. Add the mix-ins.

    Step 4: Cook for 8-12 minutes, depending on preference.

    Expert Tips To Make It

    Add the eggs and Greek yogurt to the food processor first to make blending smoother.

    Cook the yogurt waffles for 2-3 minutes longer, checking them frequently if you like them crispier.

    If you like a crispier texture, you can let them cool briefly on a wire rack before serving them as opposed to stacking them. Stacking them creates steam which makes them lose their crispiness.

    Storing: Once cooked and cooled, store leftover waffles in the fridge between layers of parchment paper in an airtight container for up to 3 days. Or, you can freeze them between parchment paper in a plastic bag for up to 3 months. Let them thaw overnight in the fridge before you need them.

    Reheating: The waffles can be reheated in the toaster or the oven on a lower heat until warmed through.

    How To Serve Them

    There are so many ways to enjoy blender waffles, you can really make them into anything you wish. Below are a few ways we rock them:

    • As a school morning breakfast, topped with maple syrup and with a side of berries.
    • As a brunch spread with coconut milk caramel sauce for drizzling and paired with my favorite dairy-free egg casserole.

    Blender Waffles FAQs

    Can I use regular yogurt in blender waffles?

    Regular yogurt can be used to make blender waffles but the result will be a thinner waffle. If doing this, you may want to scale back the yogurt amount so that the batter is slightly thicker.

    Why are my waffles not crispy?

    Waffles won’t crisp up if the waffle iron isn’t hot enough or it wasn’t preheated before pouring the batter.

    Ingredients
      

    • ¾ cups Dairy-free Greek yogurt
    • ⅓ cup Gluten-free baking flour
    • ½ teaspoon Baking powder
    • 2 Eggs
    • 2 tablespoons Peanut butter natural and runny is best
    • ¼ cup Chocolate chips

    Instructions
     

    • Preheat your waffle iron and grease it with a non-stick spray.
    • In a small blender or food processor, add all the ingredients except the chocolate chips. Pulse or process until just combined.
    • Pour the waffle batter into the waffle pan evenly. It will spread out a bit.
    • Top the waffles with the chocolate chips and close the lid.
    • Cook for 8-12 minutes depending on how you like your waffles cooked.
    • When cooked through, remove from the waffle iron and serve.

    Notes

    Make sure to put the yogurt and eggs into the blender first to make it easier to combine everything. You may need to stop and scrape the sides still, though.
    Don’t overbend; you want everything just combined. Over-blended batter makes denser waffles.
    Don’t add the chocolate chips until you’re done blending. You can add them on top of the waffles once poured or into the blender and then pour the mix (though they tend to sink more this way).
    If the batter seems too thick, add milk one tablespoon at a time. Different brands of Greek yogurt can vary significantly in thickness.
    For crispier waffles when reheating, pop them in the toaster as opposed to the oven.
    Different brands of yogurt will result in different protein and sugar amounts.
