Made with dairy-free Greek yogurt, these blender waffles are crispy on the outside, light inside, and packed with protein for an easy make-ahead breakfast.
Preheat your waffle iron and grease it with a non-stick spray.
In a small blender or food processor, add all the ingredients except the chocolate chips. Pulse or process until just combined.
Pour the waffle batter into the waffle pan evenly. It will spread out a bit.
Top the waffles with the chocolate chips and close the lid.
Cook for 8-12 minutes depending on how you like your waffles cooked.
When cooked through, remove from the waffle iron and serve.

Make sure to put the yogurt and eggs into the blender first to make it easier to combine everything. You may need to stop and scrape the sides still, though.Don’t overbend; you want everything just combined. Over-blended batter makes denser waffles.Don’t add the chocolate chips until you’re done blending. You can add them on top of the waffles once poured or into the blender and then pour the mix (though they tend to sink more this way).If the batter seems too thick, add milk one tablespoon at a time. Different brands of Greek yogurt can vary significantly in thickness.For crispier waffles when reheating, pop them in the toaster as opposed to the oven.Different brands of yogurt will result in different protein and sugar amounts.
