    Ingredients and Substitutions

    Honey, peanut butter, greek yogurt, egg, cocoa powder, and baking powder.
    • Greek yogurt: Being dairy-free (check out dairy-free diet benefits), I use a vegan Greek yogurt for the cookies, and it tastes great. Opt for a regular Greek yogurt if you need the cookies to be paleo-approved. Know that a non-Greek yogurt won’t work as well for the recipe,e as it’s not thick enough.
    • Cacao powder: I use raw cacao powder for its health benefits, but cocoa powder works fine as well.
    • Honey: I haven’t tried maple syrup in place of honey, but I’m sure the swap would work.

    How To Make Greek Yogurt Cookies

    Step 1: In a bowl, mix together the egg, yogurt, peanut butter, and honey until mostly smooth.

    Step 2: Add the cacao and baking powder and mix well.

    Step 3: Portion the cookies onto a lined sheet.

    Step 4: Top them with peanut butter and bake for 10 minutes. Let them cool on the tray.

    Expert Tips

    Texture: Make sure your peanut butter is fresh and runny so that it mixes well without clumps.

    Portioning: Use a trigger ice cream scoop to portion the cookies onto a lined baking sheet. You don’t need to press them down too much, or they’ll become thin and not fudge-like, just enough to top them with peanut butter.

    Baking:Pull them out of the oven and know they look uncooked. This is okay! Let them cool fully on the tray if you can; this helps them firm up just like baked yogurt. Grabbing them while still really warm will make them crumble a bit.

    Taste: The cookies are VERY dark chocolate in flavor, so adjust with sweetness as needed.

    How To Store Them

    Since the healthy Greek yogurt cookies are yogurt-based, they’re best stored in the fridge. They do firm up slightly, but they’re still delicious. Let them cool and store them in an airtight container for 3-5 days.

    I don’t recommend freezing the cookies as yogurt will change texture once thawed. If you do try to freeze them, separate layers of cookies with parchment paper so they don’t mash into each other.

    Ingredients
      

    • ⅓ cup Peanut butter natural and fresh
    • ¼ cup Dairy-free Greek yogurt
    • ¼ cup Cacao powder
    • 1 Egg
    • 3 tablespoons Honey
    • ¼ teaspoon Baking powder
    • 2 tablespoons Peanut butter for topping

    Instructions
     

    • Preheat the oven to 350F.
    • In a bowl, mix together the egg, yogurt, peanut butter, and honey until mostly smooth.
    • Add the cacao and baking powder and mix well until no clumps remain.
    • Use a trigger ice cream scoop to portion the cookies onto a lined cookie sheet (lined with either parchment paper or a silicone mat).
    • Top each cookie with peanut butter while lightly pressing them down and bake in the oven for 10 minutes.
    • Remove the cookies from the oven and let them cool fully on the tray before storing them.

    Notes

    Let the cookies cool fully on the baking sheet before moving them. Flourless cookies continue to firm up as they cool.
    You don’t need to press them down too much or they’ll become thin and not fudge-like, just enough to top them with peanut butter.
    For softer cookies, slightly underbake them and let them finish setting on the pan.
    Makes 6 cookies.
