In a bowl, mix together the egg, yogurt, peanut butter, and honey until mostly smooth.
Add the cacao and baking powder and mix well until no clumps remain.
Use a trigger ice cream scoop to portion the cookies onto a lined cookie sheet (lined with either parchment paper or a silicone mat).
Top each cookie with peanut butter while lightly pressing them down and bake in the oven for 10 minutes.
Remove the cookies from the oven and let them cool fully on the tray before storing them.

Let the cookies cool fully on the baking sheet before moving them. Flourless cookies continue to firm up as they cool.You don’t need to press them down too much or they’ll become thin and not fudge-like, just enough to top them with peanut butter.For softer cookies, slightly underbake them and let them finish setting on the pan.Makes 6 cookies.
