Quick Chicken Pesto Pasta

Every house has it’s staple go-to meal.  You know, the one you can whip up in ten minutes while still claiming it’s healthy and nutritious? That’s what this simple pesto pasta  is for me. The other week I posted about my favorite Fresh Basil Pesto and this week I thought I’d show you my favorite dish to use it with!

This dish is beyond simple, quick & naturally healthy! It’s easily my go-to when I have no idea what to concoct for dinner and no desire to think too hard either.

It’s a dish in which the ingredients are always on hand and it comes together fast- perfect for a busy mom!

While fresh pesto may seem daunting, with only six ingredients this pesto is easy to make and deliciously tasty. It sticks to the pasta perfectly and I love it because it adds a few more veggies to my daughters diet.

My go-to is soba (buckwheat) noodles as I find them extremely light and they don’t leave me feeling like I’ve eaten a house, however, any noodles will work so use what you have!

Ingredients In The Chicken Pesto Pasta

Serves four

  • 2 chicken breasts cooked & chopped
  • 1 cup fresh basil pesto
  • 14 button mushrooms, sliced
  • Soba noodles for four

How To Make Pesto Pasta

Make the pesto if you haven’t already. Combine all ingredients into a powerful blender and blend until smooth.

Chicken pesto pasta is simple to make and delicious to eat! Full of fresh ingredients and flavor.

Boil water and cook noodles according to package directions. Rinse and drain.

Heat some oil in a pan over medium heat. Toss in the mushrooms and sprinkle with a bit of salt and pepper. Cook for 2-3 minutes until just starting to soften.

Chicken pesto pasta is simple to make and delicious to eat! Full of fresh ingredients and flavor.

Add in the chicken to heat. Lower the temperature slightly and add the sauce to the pan only to warm it (2-3 minutes).

Assemble your dish. Place noodles into the bowl and top with pesto sauce. Swirl it around to combine it and top with more parmesan if you’d like.

Quick Chicken Pesto Pasta

This pasta is made in under thirty minutes, full of veggies and perfect for a quick weeknight dinner.

Ingredients

  • Pasta Ingredients
  • Fresh basil pesto
  • 2 chicken breasts cooked & chopped
  • 14 button mushrooms sliced
  • Soba noodles for four

Instructions

  1. Make the pesto. Combine all ingredients into a powerful blender (like a vitamix) and blend until smooth.
  2. Boil water and cook noodles according to package directions. Rinse and drain.

    That’s a must try!!!! I can’t believe how few ingredients it requires. I know I can do this one! May try it with zucchini noodles.
