💭Why This Recipe Is Different
Not a diet-food trick. This isn't a "healthy" apple crumble that swaps out all the good parts. It's a real apple crumble with protein powder mixed in, not a restrictive version of one.
Single-serve means that I can whip it up anytime and don't have to share. Exactly like my protein mug cake recipes.
Three ways to make it. Bake it in the oven for a crisp, golden top, or skip the oven completely with the microwave version below. Either way, it's still a high-protein apple crumble, just built to fit your day.
Ingredients and Substitutions

- Apple: Use one small apple or half of a super-human large one. No need to peel it.
- Protein powder: This apple crumble with protein powder is built around beef protein powder. Learn more about why beef isolate protein powder. If you want a protein apple crumble without whey, or you're using a vegan protein powder, know that plant-based powders tend to thicken the mixture more, so you may want to skip the arrowroot powder.
- Greek yogurt: Dairy-free yogurt makes this a dairy-free protein apple crumble with no other changes needed. Any yogurt works; it'll just shift the total grams of protein.

How To Make Protein Apple Crumble

Step 1: Toss the chopped apple with arrowroot powder in a small, oven-safe ramekin until coated.

Step 2: Stir in the Greek yogurt and protein powder until the apple mixture looks wet and coated.

Step 3: In a separate bowl, mix the rolled oats, maple syrup, and chopped nuts for the crumble topping, or grab pre-made homemade high-protein granola.

Step 4: Spread the topping over the apples and bake or microwave until warm and set.
Expert Tips To Make It
Protein powder changes the texture. This recipe is built for beef protein powder, specifically Equip Protein, which has the best flavor and gives zero bloat. Give it a try with code mamabear.
If you're using a vegan protein powder, skip the arrowroot, or it'll become too thick. Plant-based powders already thicken the apple mixture on their own. Likewise, Equip protein is SWEET. With other protein powders, you may need to add a bit of maple syrup or use a flavored yogurt.
Microwave version needs extra room. Use a deeper ramekin than you think you need. This protein apple crumble bubbles up while it cooks and will overflow a shallow dish. This happens with my protein chocolate chip mug cake, too.
Oven version: broil it for the last 30 seconds if you want a crisp, golden topping instead of just a done one.
No-bake option: Skip the arrowroot powder. Pour boiling water over the chopped apples, let them sit for 2 to 4 minutes, then drain before adding the rest of the ingredients. You'll still get a warm, tender apple base without turning on the oven.
