As a busy mom, finding something healthy that everyone will actually eat isn’t always easy, but this blueberry chia pudding is one my daughters happily dig into thanks to its naturally sweet flavor. Because it’s made the night before, it’s perfect for mornings when time is tight, and you still want a nourishing start (it’s actually the same make-ahead strategy I focus on in my Rise and Chill Breakfast E-Book).
Protein chia pudding has become a regular part of our routine because it’s such a simple way to boost energy without extra effort (kind of like my blended overnight oats recipe).

💭Why You'll Love The Recipe
Meal prep: Made in just 5 minutes, and it lasts for about three days in the fridge, so you can meal prep it in advance (just like low calorie protien balls!).
Texture: This blueberry chia pudding comes out with a thick and creamy texture thanks to the coconut milk and protein powder.
Healthy: Packed with both protein and fiber, you can even adjust the protein to suit your preferences.
Ingredients and Substitutions

- Frozen blueberries: The small “wild” blueberries work best for this as they melt and blend better in this recipe, as well as homemade elderberry gummies (check out this blueberry mocktail or this blueberry bliss tropical smoothie if you love blueberries!).
- Protein powder: The kind of protein powder that you choose will affect the taste and texture of the chia pudding recipe. Though the recipe was originally made with vegan protein powder, it has since been made with both collagen powder and beef protein.
- Coconut milk: You need full-fat coconut milk to give the high-protein blueberry chia pudding a more indulgent taste (like eating dessert!). Learn everything you need to know about types of coconut milk to learn the best one for you.
- Chia seeds: Potent little seeds that I think are a crucial food to be in any toddler's diet. These seeds are just loaded with nutrients. Learn more about how to eat more chia seeds daily more often.

Flavor Variations
Mixed berry: Of course, any berries will work for this recipe, just like this berry protein fluff.
Chocolate blueberry: Chocolate makes everything more indulgent. Either add 1 teaspoon of raw cacao powder to your mix or drizzle the chia pudding with dairy-free chocolate glaze.
Toppings: Sprinkle some coconut chips, maple syrup candied pecans, or coconut whipped cream on top to make the chia pudding extra indulgent.
How To Make Blueberry Chia Pudding With Protein Powder

Step 1: Mash together half the frozen blueberries, half the syrup, and the vanilla extract. Then, in a small blender, combine the protein powder, maple syrup, hemp milk, and coconut milk until smooth.

Step 2: Pour the protein milk mixture over the chia seeds and mix. Let it sit for 5 minutes before adding in the remaining frozen blueberries and mix again.

Step 3: Portion the mixture into small jars, pouring the mashed blueberry maple mixture on top or after halfway filling.

Step 4: Pop in the fridge for 4-24 hours.
Expert Tips To Make It
Re-stir: The secret to blueberry protein chia pudding (and high-protein banana chia pudding) is to stir the mixture again after five minutes so that it doesn't clump (learn more about protein chia pudding recipes).
Frozen blueberries melt slightly and let you swirl the flavor in a way fresh blueberries do not. Love blueberries? Check out these gluten-free blueberry bagels. Both breakfasts are perfect high-protein breakfast for toddlers.
Adjust your toppings: If you put your toppings on before the chia pudding sets, they'll get soggy (especially if it's a homemade high-protein granola). Personally, I put mine on right before I'm about to eat.
Storing: Chia seed pudding with protein powder can be stored in the fridge for up to 5 days. It does remain creamy, but you should give it a stir before enjoying.
Which Protein Powder To Choose
The kind of protein you choose will affect the taste and texture of the high-protein chia pudding.
- Originally, this recipe was made with vegan protein powder, which tends to absorb a lot of liquid. Specifically, it was made with Naked Nutrition Protein Powder and Botanica protein powder.
- If using a fermented protein powder, you'll need to add 1-2 more tablespoons of liquid to the recipe.
- Beef isolate protein and collagen powder (learn more about what collagen powder is) work as well. To use them, though, scale back the liquid to only ½ cup of non-dairy milk, as they don't absorb as much.
Blueberry Chia Pudding With Protein Powder FAQs
High-protein blueberry chia pudding will last roughly three days in the fridge if stored in an airtight container.
Without anything else added, the best chia pudding ratio is about 3 tablespoons of chia seeds to half a cup of liquid. However, when adding protein powder to the recipe, you’ll want to increase the liquid a bit so that you maintain the best consistency.
It’s not common, but like anything else, chia seeds can go bad. If you want to extend the life of your chia seeds, store them in a sealed jar in the fridge. Stored like that, chia seeds should last at least a year unless liquid gets into the jar as you use it. You’ll know your chia seeds have gone bad if they start to clump together. Otherwise, I wouldn’t worry about it.
To prevent clumps in chia pudding, you need to stir it twice. After the initial mix of liquid and chia seeds, let it sit for roughly 5 minutes and then stir it again. This helps remove any initial clumps as the seeds absorb.

Blueberry Chia Pudding (High Protein)
Video
Equipment
- 2 Small jars
Ingredients
- ½ cup frozen small blueberries wild
- ⅛ cup vanilla protein powder
- 2 tablespoons coconut milk
- ⅔ cup hemp milk or almond milk
- 3 tbs maple syrup
- 1 teaspoon vanilla extract
- ¼ cup chia seeds
Instructions
- Place half the frozen blueberries into a bowl along with the vanilla extract and 1 tbs of maple syrup. Mash them all together (I used a mortar and pestle).
- In a blender, combine the coconut milk, hemp milk, maple syrup, and protein powder until smooth.
- Add the chia seeds to a bowl and pour the protein milk mixture over the top. Mix well.
- Let sit for 5 minutes add the remaining blueberries and mix again.
- Portion half the chia mixture into small jars filling them only halfway. Split the mashed blueberry mixture between the two and divide up the remaining chia mixture on top. Top with a dollop of coconut cream (if desired.).
- Pop in the fridge for 4-24 hours.
Notes
- Frozen blueberries work best as they thaw and add more juice. Small ones work even better so you get “more”. Fresh will work but then you need to add 1 tablespoon of extra liquid.
- Take the time to blend the milk mixture; protein powder can clump, so this helps keep it smooth.
- Don’t overlook letting the mixture sit and re-stirring. This helps so that the chia seeds don’t clump on the bottom!
- Likewise, you can always portion the chia mixture and top the jars with the blueberry mash (instead of splitting it in the middle).
- Make sure to use full-fat coconut milk for a creamier, more indulgent texture.
- Makes two super small jars or combine them for one large serving (and 18 grams of protein).
- To lower the calories a bit, leave the coconut milk out (just use a regular almond or non-dairy milk).
- The recipe is written using regular vegan protein powder. If using beef protein or collagen powder, see the blog posts for steps on what to do.
