    Coffee Fudge [High-Protein I Dairy-Free]

    Most healthy fudge recipes use a base of nut butter to come together, including my peanut butter fudge and chocolate protein fudge recipes. This coffee fudge recipe, however, isn’t peanut butter-based. Instead, it uses coconut milk (from a can) for its rich texture and collagen powder to bump up its protein.

    Healthy: Not only is the coffee fudge dairy-free and gluten-free, but it has a touch of protein to stabilize it, too.

    Versatile: You can vary the strength of the coffee taste or add extra mix-ins to create new flavors.

    Ingredients and Substitutions

    • Most of the ingredients are pretty straightforward and easy gluten-free pantry staples.
    • Coconut milk: You need to use coconut milk from the can and drain all the water first, you only want the thick, white cream part.
    • Collagen powder: This is used as the protein source and cannot be substituted with a vegan protein powder (learn more about the difference between collagen and protein powder). I primarily use collagen powder from Perfect Supplements as I find it mixes the best into recipes (check out these collagen recipes). You may be able to use beef protein powder, though.
    • Coffee: Any flavor of coffee will work, so use what you love or try a new blend to create new tastes. Sometimes I prefer to use either Four Sigmatic Lions Mane instant coffee for the fudge or their immunity blend, depending on what I want from the fudge (focus or immune support).

    Flavor Variations

    You can add any of the following ingredients to the high-protein fudge to adjust the flavor or texture, just like with this candy cane chocolate fudge.

    • Nuts: Coffee walnut fudge is a classic, but I love adding toasted pecans personally.
    • Coconut: Opt for large flaked or cut coconut for the best texture.
    • Extra chocolate: Sprinkle some white chocolate chips on top for a fun appearance.

    How To Make Coffee Fudge

    Step 1: In a small pot, add in the coconut milk, coconut oil, chocolate chips, and vanilla.

    Whisk in a pot on the stove with coconut milk and melted chocolate.

    Step 2: Heat over low until just melted and whisk to combine.

    Step 3: Turn the element off and slowly begin whisking in the collagen and coffee.

    Step 4: Pour into a silicone mold and pop in the freezer for 2 hours to set before slicing.

    Expert Tips

    As you’re whisking in the collagen powder, you need to make sure you’re doing it slowly as well as whisking WHILE you pour. Collagen tends to clump if just dumped in, so take your time here and whisk longer than you think.

    Heat everything over low to medium heat and remove it from the heat once it’s all melted. Making the chocolate coffee fudge too hot will leave a burnt taste.

    Make sure to use coconut milk from a can and drain any water out of it. You want only the thick, white cream part, or the fudge won’t set.

    If you want more protein in the coffee fudge, use ½ cup of collagen powder. This gives it a very slight protein taste, though. If you don’t care about the protein as much, stick with using ⅓ cup.

    You can either use a silicone loaf pan (I use 8x3) or mini silicone molds in the shape of squares or hearts. This works far better than a loaf pan lined with parchment paper.

    How To Store It

    The coffee fudge recipe is best when stored in the freezer in an airtight bag. It will stay fresh for up to 3 months. When you’re ready to enjoy it, grab a square out and let it come to room temperature for about 5 minutes before devouring it.

    Can you put coffee in fudge?

    You can put coffee in fudge by either whisking brewed and cooled coffee into the milk or by adding instant coffee powder to the mixture along with the sugar or sweetener to dissolve

    Can you add espresso to fudge?

    You can add espresso to fudge once the milk or cream is heated through so that it dissolves as you whisk everything together.

    What not to do when making fudge?

    When making fudge, make sure not to heat the milk or cream too hot, or it will have a burnt taste to it. Do not pour fudge into a loaf pan without parchment paper, or better yet, use a silicone mold to make it easier to remove. And lastly, do not scrape the bottom of the pot when pouring.

    Ingredients
      

    • ¼ cup Coconut milk white part from the can
    • ¼ cup Coconut oil
    • ½ cup Collagen powder

    Instructions

    • Pour the fudge mixture into an 8x3 silicone mold and sprinkle salt on top if you’re using. Pop it in the freezer for 2 hours to set.
    • Remove from the freezer and slice it into squares before storing.

    Notes
