    • Boneless, skinless chicken breasts: No dicing raw chicken is required for this crock pot recipe, and that’s what I love! Simply thaw your chicken breasts and get them in the pot.
    • Seasonings: You need all your classics for this non-dairy pot pie. Paprika, sea salt, a crack of pepper, and a few more. The fresher the spices, the better the flavor.
    • Potatoes: The potatoes add some bulk to the recipe. Make sure to chop them into larger bites as they will fall apart slightly.
    • Frozen veggies: Don’t go to the hassle of chopping up all the carrots or celery. No need to be fancy. Grab a bag of mixed veggies from Costco and call it a day.
    • Chicken broth: I love homemade chicken broth but keeping some on hand doesn’t always happen. This is why I mostly use bone broth powder for busy weeknight meals like this one and crockpot beef fajitas. Learn more about bone broth powder and why you’ll fall in love with it!
    • Coconut milk: The secret ingredient to keeping this pot pie recipe both creamy and dairy-free, just like slow cooker chicken alfredo! Coconut milk gives a creamy blend to the sauce without using canned mushroom soup.
    • Almond flour; There’s no crust in this paleo chicken pot pie. But the almond flour addition gives it a more classic, comforting feel as if there was.
    • Tapioca flour: You only need a teaspoon, and don’t skip it! This thickens up the sauce to creamy perfection.

    How To Make This Into A Traditional Pot Pie

    The best part about making chicken pot pie in the slow cooker, is that you can turn into into a traditional pot pie easily!

    All you need to do is purchase one or two gluten-free pre-made pie crust. Follow the directions on the label and then fill the pie crust with the pot pie filling from the slow cooker.

    Pop it into the oven for the time frame on the label (just to heat it as the filling is ready to go!), and you have a complete pot pie!

    How To Make Dairy-Free Chicken Pot Pie

    Step 1: In a slow cooker, layer the chicken breasts, and potatoes.

    Step 2: Sprinkle on the seasonings and almond flour.

    Step 3: Pour the chicken broth and coconut milk over top and cook for 5 hours on low.

    Step 4: 30 minutes before you’re ready to eat, pull apart the chicken with a fork.

    Important Teaching Tips

    Make sure to use almond flour and not ground (learn the difference between almond flour and ground almonds). It will give the gluten-free dairy free chicken pot pie a more comforting feel. Ground almonds are more likely to clump together.

    If you don’t have fresh onion, no problem! Add 1 teaspoon of onion powder to the seasonings.

    How do I store leftovers slow cooker chicken pot pie?

    Leftover chicken pot pie can be stored in an airtight container in the fridge. They can be reheated in the microwave; however, the mixture will be thicker once it has been chilled. If you need to reheat a lot of the easy chicken pot pie, you’d be best doing so on the stove and adding 1-2 tablespoons of water or broth.

    How long should you cook chicken in the slow cooker?

    The chicken will dry out if it is cooked too long in a slow cooker without enough liquid. For this slow cooker chicken, make sure to only cook the mixture for 5-6 hours. If you need to cook it longer, add in ⅛ to ¼ cup extra broth so that you have enough liquid leftover to cook the frozen veggies.

    Ingredients
      

    • 3 Chicken breasts boneless, skinless
    • 2 Russet potatoes 1 ⅔ cups chopped
    • ½ Sweet onion chopped
    • 1 teaspoon Ground cumin
    • 1.5 teaspoon Salt
    • 1.2 teaspoon Paprika
    • Ground pepper to taste
    • 1 Bay leaf
    • ½ cup Coconut milk
    • 1.5 cups Bone broth 1 large scoop if using powder
    • ½ cup Almond flour
    • 1 teaspoon Tapioca flour
    • 2 cups Frozen mixed veggies

    Instructions
     

    • In a slow cook layer the chicken breasts, onion, and potatoes.
    • Sprinkle on the seasonings and almond flour. Add in the bay leaf.
    • Pour the chicken broth and coconut milk over top and make sure everything is somewhat covered.
    • Cook for 5 hours on low.
    • 30 minutes before you’re ready to eat, pull apart the chicken with a fork.
    • Sprinkle the tapioca flour over top and give it a good stir. Mix in the frozen veggies.
    • Let cook on low, covered, for another 15-30 minutes.
    • Serve as is, with tortilla chips, or gluten-free buns.

    Notes
