- ½ teaspoon Baking soda
- 0.5 teaspoon Baking powder
- 2 tablespoon Ground coffee
- 1 teaspoon Cinnamon
- ⅓ cup Cane sugar
- ¾ cup Dairy-free Greek Yogurt
- ½ cup Applesauce or mashed banana
- 2 Eggs
- ⅛ cup Almond milk
- 1 teaspoon Vanilla extract
Cinnamon Sugar Topping
- 1 teaspoon Cinnamon
- 1 teaspoon Nutmeg
- 1 tablespoon Cane sugar
Instructions
- Preheat the oven to 350 degrees Fahrenheit.
- In a large bowl combine the yogurt, applesauce, and eggs. Mix until mostly smooth.
- Add in the dry ingredients and stir until just combined.
- Pour the batter into a silicone loaf pan and smooth out the top.
- In a small bowl, combine the topping ingredients. Sprinkle the mixture over top of the coffee cake.
- Bake for 30-35 minutes until a toothpick comes out mostly clean.
