If you’re looking for busy weeknight meals, there is no easier tool than the slow cooker. Call me old-fashioned but it is one of my favorites! Coming home from work to a house that smells divine with a meal hot and ready is pretty much perfection for a busy mom.
And these slow cooker beef fajitas are no exception (along with slow cooker beef and broccoli, of course). Learn more about choosing slow cookers and the best fit for your family (and how to use it!) and get on top of these 30 dairy-free slow cooker recipes to keep your nights sane.
Why You'll Love The recipe
No Effort: These steak fajitas are easy to prep and the slow cooker does all the work for you.
Taste: Given that the recipe uses a homemade fajita mix it's got a punch of savory flavor that makes you want more.
Versatile: Enjoy them as fajitas one night and pasta the next. This recipe is wonderful for meal prep.
Ingredients You’ll Need

- Steak strips: To be honest, any beef will work here. Most commonly, I use stir fry beef strips because they’re on sale (hello, budget meals!). However, I have also used flank steak and cut it up. Because the beef stews for so long, even a tougher cut will work! Learn more about buying meat on a budget so you can save costs here.
- Bell peppers: Choose any colors you like; these do get super soft from cooking, so sometimes it’s nice to serve the slow cooker steak fajitas with some fresh ones on the side, too.
- Broth: You do need a tiny bit of broth for the recipe to fully get its flavor. Though beef broth makes sense, I actually use bone broth powder because it’s what I have on hand most often (learn more about bone broth powder).
- Homemade fajita seasoning: A unique blend of spices you already have on hand that’ll bump up the flavor of the slow cooker beef fajitas.
See the recipe card for full information on ingredients and quantities.
Flavor Variations
Spicy: Add a few jalapenos into the crockpot or red pepper flakes for an extra kick of heat.
Creamy: If you have a dairy-free cream cheese you love, 1-2 tablespoons gives a delicious taste. Or, if you want to switch it up, crockpot green chili chicken is another way to rock taco/fajita night too!
How To Make Slow Cooker Beef Fajitas
- Prep all your veggies.
- Place the steak and veggies into the slow cooker.
- Pour the broth and tomato sauce over the top.
- Mix the homemade taco seasoning and sprinkle it on.
- Mix all the ingredients and turn to low for 8 hours.

Expert Tips
Know that almost any cut of beef will work. Most commonly, I use beef stir fry strips, but flank steak cut into strips works too. You could even use cubed stewing beef like in this slow cooker steak bites recipe.
There’s no need to “lock” your lid on the crock pot, it’s okay if some of the steam and moisture escape.
This beef fajita recipe was made in a 7-quart slow cooker. If you have a larger slow cooker, you many not need to cook them as long. On the opposite side, a smaller crock pot, you may need to cook them longer.
Basically, know that the size of your crock pot can alter the cooking length of the steak fajitas.
Use any broth you wish in the recipe. I use bone broth powder because it’s easiest and gives a bit of a healthy boost. Learn more about what bone broth powder is.
How To Serve The Beef Fajitas
This is the fun part of the meal!
Most commonly, we like to serve our beef fajitas or something like slow cooker pork carnitas on the table with the following toppings:
- Gluten-free warm tortillas
- Cashew sour cream
- Lime
- Kimchi
- Fresh crunchy peppers
- Diced tomatoes
- Salsa
- Avocados
We pop everything onto the table and let everyone fix their own fajita.

Cook Once Eat Twice
As I mentioned, one of the best things about these crock pot steak fajitas is that they can be used in multiple ways!
Obviously, serving them with wraps is the most common, but the mixture itself can also be used:
- On top or mixed into rice to make stir fry
- Mixed with noodles for pasta
- On top of spaghetti squash for a lower-carb option
Personally, I like to double the batch sometimes so that we have leftovers for the next meal as well.
It’s how I make meal prep easy (learn more about tips to simplify meal prep).
Slow Cooker Beef Fajitas FAQs
Skirt steak or flank steak tends to be used the most. However, almost any cut will work because the beef is cooked for so long in the crock pot. With it simmering in juices all day, the meat tends to soften a bit.
Any toppings you enjoy! The most common toppings for beef fajitas are salsa, sour crème, lime juice, chopped tomatoes, avocados, and fresh romaine lettuce.
Homemade fajita seasoning is a unique blend of chili powder, cumin, paprika, salt, pepper, and garlic powder.
Store leftover beef fajitas in an airtight container (along with their juices) in the fridge for 3-4 days. Reheat them in the slow cooker on low or on the stove until heated through.
