    With Mother’s Day coming up, this easy protein mousse is a simple dessert that feels a little special while still ensuring you hit your protein goals. As a busy mom myself, I love treats that let you enjoy something chocolatey without feeling over the top (it's the whole premise behind the Strong and Sweet Protein Guide), and this mousse is one that quickly becomes a staple once you try it.

    Not only is it rich and creamy, but it’s easy to portion into individual servings for a small gathering or family dinner. It’s also a great way to sneak in a bit more protein while still enjoying dessert, something I often recommend to clients too (learn more about how to increase protein intake daily). Don't try to cut your sweet tooth, indulge it just with better recipes.

    Ingredients and Substitutions

    • Egg whites: You’ll want to use fresh egg whites that have been separated from the yolks, as they work the best. Egg whites from the carton don’t fluff up enough for this recipe.
    • Vegan protein powder: Not all protein powders are created equal, and thus, the brand you choose will affect the texture and flavor. This protein mousse was made with Naked Nutrition’s Rice Protein Powder, which is what helps give this mousse not only its protein intake but also its light, fluffy texture. It's great for this chocolate protein pudding, too.
    • Cacao powder: This gives the mousse its rich chocolate flavor but also a burst of nutrients. Learn more about the difference between cacao powder and cocoa powder and know that by choosing cacao you’re getting more calcium, antioxidants, and flavor.
    • Full fat coconut milk: Coconut milk is what replaces the cream from traditional mousse. Make sure to use full fat coconut milk, or your mousse will come out thin and more pudding-like.

    Flavor Variations

    One of the best things about this protien mousse recipe is that you can make it as sinfully delicious or as simple as you like. This is what makes it perfect for Mother’s Day: everyone can top their own with fresh fruit, toasted coconut etc.

    Personally, when I serve this protein mousse, I top mine with:

    • 2 ingredient Whole30 whipped cream
    • Shaved dark chocolate
    • Dairy-free chocolate glaze
    • Sometimes I do a coconut milk caramel sauce.

    How To Make Chocolate Protein Mousse

    Step 1: In a small pot, heat the coconut milk, chocolate chips, and vanilla extract over very low heat.

    Step 2: In another bowl, beat the egg whites with an electric handheld mixer for two full minutes until they’re foamy.

    Step 3: Once the chocolate chips are melted, use the handheld mixer to mix in the chocolate protein powder and cacao powder to the coconut milk mixture.

    Step 4: Finally, add in the egg whites while keeping the mixer going.

    Step 5: Portion into mini jars or serving cups and let sit in the fridge for 4 hours to firm up before serving.

    Expert Tips

    Make sure to use full-fat coconut milk and only the thick, white cream from the top of the can. Otherwise, your mousse will be runny. To get this, place a can of full-fat coconut milk in the fridge, upside down, overnight. In the morning, open the can, drain the water, and use only the cream that's left.

    Do not beat the protein powder into the egg whites as it tends to clump. It works better if it’s added to the heated coconut milk instead. And when adding it, make sure to keep the mixer going.

    Keep in mind also that vanilla protein powder or chocolate will work for the recipe. Using a chocolate protein will result in a richer flavor.

    Storing it: Leftover high-protein mousse should be placed in the fridge and covered with plastic wrap. Once covered, it will last 3-4 days in the fridge. This means it’s a great dessert to prep in advance or the night before.

    Which Protein Powder To Use

    This high protein chocolate mousse was made with Naked Nutrition Brown Rice protein powder.

    This is important because each protein powder (especially pea protein versus rice protein powder) will absorb liquid differently.

    Another thing to note is that because vegan protein powder absorbs more than whey protein, you can’t substitute one for the other (though they have some wicked whey proteins if you tolerate dairy).

    How is protein mousse different than protein pudding?

    Protein mousse is much lighter and fluffier than protein pudding. Typically, protein pudding is made using a base of Greek yogurt and comes out very thick. Protein mousse, on the other hand, is made by beating egg whites to give it a light, melt-on-your-tongue texture.

    Is chocolate protein mousse a good post-workout snack?

    Protein chocolate mousse can definitely be used as a post-workout snack if you have it ready. Because it takes time to set, you’d need to prep in advance. However, with 19 grams of protein, this chocolate mousse works well to give your muscles some of the fuel they need post-workout.

    Can I substitute whey protein powder for vegan protein powder?

    Because vegan protein powder absorbs so much liquid when mixed, whey protein powder cannot be used in its place without reducing the liquid ingredients or adding another binder. You could however, use beef protein isolate.

    Notes

    Make sure to use full-fat coconut milk. Otherwise, your mousse will be runny. Read the expert tips to see how to separate the coconut cream from the water in the can.
    In the same thinking, use fresh egg whites separated from the eggs as they whip better.
    Do not beat the protein powder into the egg whites as it tends to clump. It works better if it’s added to the heated coconut milk instead. And when adding it, make sure to keep the mixer going.
    Beat the egg whites longer than you think. You really want them foaming.
    The brown rice powder only comes in a plain flavor, hence the cacao powder. If you're using a chocolate protein powder (pea protein works FYI) then just add 2 teaspoons more protein powder and skip the cacao.
    The mousse is just as delicious after four hours of sitting in the fridge as it is 3-4 days. It thickens slightly though.
    Do not top it with whipped cream until you're ready to serve.

      I have three questions for you.
      1) Can I use hemp protein powder instead of the brown rice one you use?
      2) For the coconut milk: is that the thick part AND the liquid part combined in can OR do we just use the thick part?
      3) No yolks in the mousse, right?

        Hey Monika! Not sure on hemp protein as I don't use it much, does it absorb liquid like the others? I personally think that it would be okay (worked for me with pea protein too) but flavor may be different. Coconut milk, only use the thick part as it makes it creamier! I used a blended one and it worked but wasn't as awesome. No yolks in the mousse, just the whites! And for some reason fresh egg whites separated works better than a carton of them (wish I a reason for you but I don't lol).
