High Protein Chocolate Mousse (No Dairy!)

Indulge in a delicious and healthy dessert with chocolate protein mousse. Made with only a handful of ingredients this protein mousse is a great way to satisfy your sweet tooth!

Equipment

Ingredients

  • ½ cup Vegan chocolate protein powder brown rice
  • 1 tbs Cacao powder
  • cup Mini chocolate chips
  • ½ cup Full fat coconut milk
  • 4 Egg whites freshly separated

Instructions

  • In a small pot, heat the coconut milk, chocolate chips, and vanilla extract over low heat. Until hot.
  • In another bowl, beat the egg whites with an electric handheld mixer for two full minutes until they’re foamy.
  • Once the chocolate chips are melted, use the handheld mixer to mix in the protein powder and cacao powder to the coconut milk mixture.
  • Finally, add in the egg whites while keeping the mixer going.
  • Portion into mini jars or serving cups and let sit in the fridge for 4 hours to firm up before serving.

Notes

  • Make sure to use full-fat coconut milk. Otherwise, your mousse will be runny. IN the same thinking, use fresh egg whites separated from the eggs as they whip better.
  • Do not beat the protein powder into the egg whites as it tends to clump. It works better if it’s added to the heated coconut milk instead. And when adding it, make sure to keep the mixer going.
  • Beat the egg whites longer than you think. You really want them foaming.
  • The mousse is just as delicious after four hours of sitting in the fridge as it is 3-4 days. It thickens slightly though.
