Most recipes use green chickpeas for the color. These are basically chickpeas that were harvested early, before they fully mature. But this green chickpea hummus gets its vibrant color the easier way: blending in veggies. It’s my favorite “use up what’s in the fridge” trick (especially when there’s sad kale hanging out in the crisper 😅).
Ready in just five minutes, it’s the perfect throw-together snack and works on everything from sandwiches to soba noodle bowls. And because it’s creamy and mild, it’s an easy way to sneak more greens into your day without feeling like you’re eating a salad. Plus, it’s SO good as the base for a grilled vegetable hummus wrap.

Step 2: Add in the kale, chives, and chickpeas. Begin to blend on low. Use a tamper as needed.

Step 3: Add the water to help blend completely. Blend until everything is combined. Serve!
Expert Tips
This green hummus is thick. If you want to thin or smooth it out, add a tablespoon more of oil and tahini until you reach your desired texture. Know that the longer you blend it, the smoother it will be.
Keep the color bright and uplifting by using really fresh greens.
Store green chickpea hummus in an airtight container in the fridge for 5-7 days.
