Rice Bowl Chicken Fajitas – Gluten Free

Weeknight dinners are always a little bit insane. Once you get pick up kids, get home and settled it’s already pretty late and you need a healthy dinner FAST (which is why I put together this e-book of thirty recipes in under thirty minutes!). This fajita bowl not only whips up pretty quickly but it’s packed with veggies, protein and has a comfort food quality.

Gluten Free Chicken Fajitas

Chicken fajitas were always one of my favorites as a kid- how can you not like chicken in a wrap?? I didn’t much care for onions.. or peppers though so really I was just eating chicken and cheese in a white wrap. Not exactly the epitome of health but not the worst I could eat either.

The bigger issues was that I could put back about six or seven wraps when I hate them. And while I’m happy that I got a protein hit, it’s not really a balanced meal.

Fast forward twenty years and I still love chicken fajitas! But I also enjoy having my meals a bit more balanced.

This fajita bowl tastes just like regular chicken fajitas only with a bit more healthy ingredients mixed in. Plus, anything in a bowl is a huge win for me right now!

One of the biggest points of this bowl is that I use homemade taco seasoning. I’ve been using this recipe from Wellness Mama for a few years now and it is a definitely favorite! Not only is it delicious (seriously, we add this seasoning to everything!) but when you make it yourself you can ensure it’s gluten free and contains no wonky preservatives. Not to mention you can control the sodium in it. Really, have you looked at what’s in the packaged stuff- yikes!

If you’re not up for making your own, this organic version is my go-to as I believe it’s gluten free also. Truthfully though, we just make up a big batch and keep it in the cupboard.

Everything else in these bowls is pretty standard for fajitas (which is what makes them tasty!). The only difference being instead of using wraps you’ll fill the bowl with your favorite blend of rice.

My hubby personally adores basmati rice because it’s light and almost fluffy like. Lately I’ve been loving regular brown rice though because it gives the bowl a bit more texture and is semi chewy. But really, just grab what’s in your cupboard!

The other perk of these rice bowl chicken fajitas is that they’re pretty quick to whip up! We also keep cooked chicken in the fridge and I cook rice at night when I know I’ll need it. With your two biggest ingredients already prepped, it’s just a matter of cooking it all together and serving!

This makes it so weeknight dinners are pretty relaxed and stress free- a rarity as a mom!

Ingredients in The Chicken Fajitas – Rice Bowls

  • 2 chicken breasts, cooked and chopped
  • 2 large bell peppers
  • 1/2 sweet onion
  • 3 tablespoon coconut oil
  • 5 cups rice, cooked
  • 4 tomatoes, chopped
  • 1 cup corn (frozen or canned)
  • 3 tablespoons taco seasoning (I make my own)
  • 1 lime
  • Salsa for serving

How To Make The Gluten Free Chicken Fajitas

Chop the bell peppers and onions into small strips.

In a large pan, heat one tablespoon of coconut oil slightly over medium heat.

Once hot, add in the peppers and onions. Cover and cook for 4-6 minutes.

Sprinkle 2 tablespoons of seasoning over the peppers. Cook another two minutes tossing to coat.

Remove from pan and set aside.

Keep the pan on the burner and add remaining oil.

Place the chicken and last tablespoon of seasoning over the chicken and toss to coat (one to two minutes).

Assemble to bowls: place the rice on the bottom and top the bowl with corn, peppers, tomatoes and chicken.

Serve with salsa and a squeeze of lime.

Serves four.

This chicken fajita bowl is gluten free, healthy and quick to make. Perfect for a stress free weeknight dinner.

Ingredients

    I actually REALLY LOVE chicken FAJITAS and my husband and I are trying to figure out recipes he and I can make TOGETHER and EAT TOGETHER… So I feel like THIS will definitely be one of them!
