Ingredients You'll Need
Cooked Chicken Breasts: part of easy meal prep is making sure you always have protein in the fridge! It doesn't matter how you cook the chicken breasts just that they're ready to be seasoned.
Bell peppers: slice them thinls so that they cook faster but know that julienned carrots will work too.
Sweet onion: a classic for fajiat bowls, make sure to use sweet onion (not regular) for maximum flavor.
Frozen corn: gives the bowls a classic burrito feel, canned or frozen works.
Homemade fajita seasoning: a unique blend of spices for maximum flavor. Use fresh spices to make the blend more deliciously potent.
Cooked rice: though white rice is used, brown rice works just as well! Make sure there's rice pre-cooked to make these bowls as easy as possible!

Homemade Fajita Seasoning
These chicken fajita bowls use a tasty, homemade fajita seasoning to boost their flavor. While grabbing a pack of taco seasoning will work too, making your own has its benefits:
- No preservatives
- No sweeteners or dyes
- Controlled flavors
Made from simple spices like chili powder, cumin, garlic, and onion, homemade fajita seasoning is an easy addition to any meal (like these sheet pan steak fajitas).
Whip up a batch and store it in an airtight jar in the cupboard for use on these fajita bowls, taco night or just to season some barbeque chicken!
How To Use The Fajita Bowls For Meal Prep
One of the reasons this burrito bowl recipe is so helpful to busy moms is that they can be made and prepped in advance!
Follow the steps below and save yourself some time by using these fajita bowls for grab-and-go lunches (this Teriyaki chicken works too!!
- Cook the rice according to package directions
- Cook the peppers, onions in a pan with the taco spices and season the chicken
- In containers, divide the rice, and pepper, and chicken mixture
- Top each bowl with canned corn, avocado, and tomatoes
Thatβs it! This bowl recipe makes four servings.
Topping The Bowls
While the recipe calls for salsa to top the bowls, thereβs no reason not to get creative! Adding in a few more flavors you have on hand can make the chicken fajita bowls seem new each time you make them.
Try the following toppings and see what you like best:
- Avocado
- Fresh salsa
- Kimchi (learn more about the benefits of kimchi!)
- Squirt of lime juice
- Cashew sour cream
- Pickled red onion
- Roasted root vegetables in place of peppers during the winter months
- Easy sauerkraut with apples and bacon
Likewise, have the toppings on the dinner table and let everyone create their own bowl! This is a great way to get kids interested in healthy food.
Plus, you can interchange the ingredients in the bowl to create a fresh, healthy fajita bowl each time (like using a blackstone fried rice as the base!).
