    Indulge in all the creaminess of double chocolate with this one-minute Chocolate Protein Fuff. Made with vegan protein powder and sweetened with maple syrup, this protein fluff recipe whips up without xanthan gum and makes the perfect bedtime snack.

    This quick little snack has rescued me so many times when I was craving something and could've easily gone way off track eating some kind of store-bought junk. It satisfies my chocolate craving and all the protein keeps me happy for a long time. I also love the texture contrast with the little chocolate chips!

    Sweet, creamy, and ready in just one minute, this protein fluff is one of the easiest ways to crush a sweet craving while sneaking in a healthy protein boost (though this chocolate protein mousse or a single serving protein cookie are pretty great too).

    It’s one of my favorite high protein snack recipes any time of day, but I especially love it as a bedtime snack, right up there with these healthy protein-based bedtime snacks. That’s when the chocolate cravings hit hardest, and this fix-all recipe never fails, just like this chocolate collagen pudding.

    This chocolate protein fluff is different than most in the sense that it doesn’t contain instant jello/pudding mix and is made without xanthan gum like this frozen berry fluff.

    Vegan vanilla protein powder: The kind of protein powder you choose will affect the texture and flavor. In order to gain maximum fluffiness, you want to use a protein that's pea-protein based. This helps bind and keep the recipe fluffy in the same way xanthan gum would.

    Peanut butter: Any nut butter will work, and this is an easy way to adjust the flavor, just like these 4-ingredient protein bars. Make sure to use fresh peanut butter. Using the harder stuff at the bottom of the jar won't blend as well.

    Know that you can eliminate the raw cacao powder if you use a chocolate protein powder. Likewise, if your protein is very sweet, you may not need the maple syrup. Replace it with more non-dairy milk.

    • Vanilla almond: Use vanilla vegan protein powder, almond butter, and add a tiny bit of almond extract for a nutty flavor almond like this caramel protein fluff.
    • Crunch: Sprinkle some chopped pecans (toasted is even better) into the mix for a bit more texture.
    • Indulgent: Make the protein fluff into a full-on dessert by drizzling it with homemade dairy-free chocolate sauce.

    The type of protein powder you choose will affect both the flavor and the texture of the snack (learn more about how to choose a protein powder). A rice protein powder will have a chalkier taste, whereas a beef protein powder will give the recipe a stickier texture.

    Adjust the texture of the chocolate protein fluff by adding more dairy-free milk if the fluff seems too dense. Add it slowly, 1 teaspoon at a time.

    Use a fork to whisk the mixture, not a whisk. It's too thick for a whisk, and it will only get stuck.

    Enjoy the vegan protein fluff immediately as it does not store well in the fridge.

    The recipe can be made nut-free by using Sunbutter in place of nuts and homemade creamy hemp milk as a liquid

    Step 1: Combine the dry ingredients in a small bowl.

    Step 2: One by one add in the liquid ingredients.

    Step 3: Mix with a form until the desired texture is achieved.

    Step 4: Add any toppings to the protein fluff and enjoy right away!

    Topping Ideas

    If you’re watching calories, you’re not going to want too many toppings. Which is okay!

    The base protein fluff recipe is delicious all on its own (provided you like the taste of your protein powder!). However, if you’re using protein fluff to curb cravings, toppings are crucial.

    • ⅓ cup Vegan Vanilla Protein Powder 1 scoop
    • 1 tbs Peanut butter natural and runny
    • ¼ cup Almond milk
    • 1 tbs Almond mil yes, you need both
    • 1 tbs Maple syrup
    • 1 teaspoon Cacao powder
    • ½ tbs Mini chocolate chips

    Instructions
     

    • In a small bowl, combine all ingredients except the chocolate chips.
    • Use a fork to mix until combined and fluffy.
    • Let it sit for 2-3 minutes to absorb, if you can. The mixture thickens up as it sits.
    • Mix again and fold in the chocolate chips if using.

The fluff is best when a pea protein powder is used.A rice protein powder will have a chalkier taste, whereas a beef protein powder will give the recipe a stickier texture.

      I’m curious as to why no one commented about the fact that there are two different measurements for the almond milk:
      ¼ cup almond milk
      1 tbs almond milk
      Is it 1/4cup PLUS 1Tbs?
      That makes sense, now that I’m typing this. If that’s the case, perhaps clarifying that in the recipe would be helpful.

      I was struck with a chocolate craving yesterday afternoon (what's new???) and happened to have all of the ingredients for this chocolate fluff in my kitchen.
