This single-serve protein apple crumble is built for the exact craving that hits after dinner: something warm, apple-cinnamon, protein-dense, and done in under 5 minutes.

If you've tried my single-serve banana bread and loved it, this is the same kind of thing. I have honestly used this protein apple crisp as a bedtime snack as well as a breakfast the next day because it's so utterly easy (here's more high-protien bedtime snacks for you!). And with 32 grams of protein, I feel GOOD about enjoying it anytime.

    💭Why This Recipe Is Different

Not a diet-food trick. This isn't a "healthy" apple crumble that swaps out all the good parts. It's a real apple crumble with protein powder mixed in, not a restrictive version of one.

Single-serve means that I can whip it up anytime and don't have to share. Exactly like my protein mug cake recipes.

Three ways to make it. Bake it in the oven for a crisp, golden top, or skip the oven completely with the microwave version below. Either way, it's still a high-protein apple crumble, just built to fit your day.

    Ingredients and Substitutions

Ingredients like apple, maple syrup, oats, and protein powder with text labels over the top.
    • Apple: Use one small apple or half of a super-human large one. No need to peel it.
    • Protein powder: This apple crumble with protein powder is built around beef protein powder. Learn more about why beef isolate protein powder. If you want a protein apple crumble without whey, or you're using a vegan protein powder, know that plant-based powders tend to thicken the mixture more, so you may want to skip the arrowroot powder.
    • Greek yogurt: Dairy-free yogurt makes this a dairy-free protein apple crumble with no other changes needed. Any yogurt works; it'll just shift the total grams of protein.

See the recipe card for full information on ingredients and quantities.

How To Make Protein Apple Crumble

Small glass ramekin with chopped apples and arrowroot powder on a red and blue cooling pad.

Step 1: Toss the chopped apple with arrowroot powder in a small, oven-safe ramekin until coated.

Step 2: Stir in the Greek yogurt and protein powder until the apple mixture looks wet and coated.

Green measuring cup with homemade crumble topping and an apple and protein powder mixture behind it in a ramekin.

Step 3: In a separate bowl, mix the rolled oats, maple syrup, and chopped nuts for the crumble topping, or grab pre-made homemade high-protein granola.

Uncooked single serve apple protein crumble on a hot pad with an apple behind it.

Step 4: Spread the topping over the apples and bake or microwave until warm and set.

    Expert Tips To Make It

Protein powder changes the texture. This recipe is built for beef protein powder, specifically Equip Protein, which has the best flavor and gives zero bloat. Give it a try with code mamabear.

If you're using a vegan protein powder, skip the arrowroot, or it'll become too thick. Plant-based powders already thicken the apple mixture on their own. Likewise, Equip protein is SWEET. With other protein powders, you may need to add a bit of maple syrup or use a flavored yogurt.

Microwave version needs extra room. Use a deeper ramekin than you think you need. This protein apple crumble bubbles up while it cooks and will overflow a shallow dish. This happens with my protein chocolate chip mug cake, too.

Oven version: broil it for the last 30 seconds if you want a crisp, golden topping instead of just a done one.

No-bake option: Skip the arrowroot powder. Pour boiling water over the chopped apples, let them sit for 2 to 4 minutes, then drain before adding the rest of the ingredients. You'll still get a warm, tender apple base without turning on the oven.

    Ingredients

    • 1 Apple chopped
    • 1 scoop Beef-based protein powder I use Equip
    • 2 tablespoons Greek yogurt dairy-free as needed
    • 1 teaspoon Arrowroot powder
    • 2 tablespoons Rolled oats gluten-free as needed
    • 1 tablespoon Maple syrup
    • 2 tablespoons Chopped nuts

    Instructions

    • In an oven-safe, small ramekin, combined the chopped apples and arrowroot powder until the apples are kind of coated.
    • Mix in the Greek yogurt and protein powder. The apple mixture should look coated and wet.
    • In a smaller bowl, mix together the rolled oats, maple syrup, and chopped nuts.
    • Top the apples with the oat-based granola and smooth it out.
    • Either bake it in the oven at 350F for 10 minutes or microwave it for 90 seconds.

    Notes

One small apple, unpeeled and chopped, is enough for one serving. Half of a large apple works too.
Scale back some of the calories by using a low-calorie or keto granola in place of making an oat topping.
The protein you choose makes a huge difference to this recipe. Equip protein is what was used because of its indulgent flavor and lack of bloating afterwards.
If using another protein, you may need to add a bit more sweetener and liquid to the mix depending on how it absorbs.
