    • 4 cups crispy rice cereal
    • ½ cup almond butter fresh and smooth
    • ½ cup honey natural blends best
    • ¼ cup brown rice syrup
    • 1 tablespoon coconut oil
    • ¼ cup chocolate chips enjoy life brand

    Instructions
     

    • Prep and measure your rice puffs.
    • In a microwave safe bowl, combine the honey, almond butter, and coconut oil and heat until just melted.
    • Whisk the rice syrup into the bowl.
    • Pour the wet mixture into the rice puffs and combine until everything is sticky.
    • Let cool for 3-5 minutes and add in the chocolate chips. Stir them in.
    • Line an 8x8 pan with parchment paper and scoop in the rice krispie mixture.
    • Using a second piece of parchment paper, press down until flat and even in the pan.
    • Place in the freezer for at least thirty minutes to set.
    • Remove from the freezer and cut into nine large squares or twelve smaller ones.

    Notes

    Make sure not to heat the liquid ingredients too much (just melted). Otherwise, the nut butter won't mix well, and the honey becomes too hard.
    Any nut or seed butter works in this recipe. Cashew butter especially makes them decadent. Use sunflower seed butter if you need to make them nut-free.
    Stir in the liquid ingredients and chocolate chips separately, or the chocolate chips will melt into the gluten-free mixture.
    Press the rice krispie mixture into the pan firmly as this is what will help to hold them together when slicing.
    Store these rice krispie treats with marshmallows in the freezer and let them thaw for 5-10 minutes before eating. They can sit out longer, but they definitely get stickier!

      These definitely aren't the rice krispies I grew up eating, but that's why I love them. They taste like a treat, but leave me feeling nourished and satisfied instead of just gross and overly sweetened.
