    Fresh berries: Chop up your favorite berries and mix them into the collagen powder ice cream for a pop of fresh flavor.

    How To Make Collagen Ice Cream

    Step 1: Add the ingredients to a high-powered blender.

    Step 2: Process until smooth.

    Step 3: Pour into an 8x4, lined (or silicone!) baking pan.

    Step 4: Mix in sprinkles and freeze. Use an ice cream scoop to portion out the ice cream. Enjoy!

    Expert Tips

    The creaminess of your soft serve ice cream depends on your coconut milk. Make sure it’s full-fat and that it gets solid in the fridge overnight. Make sure to drain all the water out of the can and only scrape out the white, coconut cream for the ice cream. If your coconut milk is soft or runny, your ice cream will be runny as well.

    The pasteurized egg is what makes the ice cream creamy enough to scoop. If you omit it, your coconut milk will just freeze solid and have a flakier texture.

    If you do not have vanilla stevia, do not increase the honey. Instead, use ½ teaspoon regular vanilla extract + a few drops or ½ bag of powdered stevia.

    High-quality collagen powder matters here so that you can be sure it blends smoothly and is not gritty. I use Perfect Supplements collagen powder because it's from such a pure source. If you try it, code mamabear10 saves you money.

    Different coconut milks freeze differently. Pop the protein ice cream into the freezer for 30-60 minutes, checking on it after 30. Some will be the perfect texture for scooping at 30 minutes, and some will be too soft. What you don’t want is for it to get too hard where it crystallizes.

    How To Store It

    This ice cream is best eaten after that first freeze when it is creamy and scoopable. If you have leftovers, store them in an airtight container in the freezer for up to 2 months, but it does get really hard.

    To enjoy it if it's been stored, I personally reblend, refreeze and re-scoop it. If you don't want to put in the hassle, break a bit off and blend it into your favorite balanced smoothie! It makes any smoothie ultra-creamy and super-rich.

    Collagen Ice Cream FAQs

    Can I use protein powder instead of collagen?

    Protein powder has not been tested with this recipe. Likewise, vegan protein powder alters the color of the ice cream, making it not as “white,” which can be off-putting. And of course, all protein powder blends absorb liquid differently, so there’s no guarantee on texture.

    Why is my collagen ice cream icy?

    Protein ice cream becomes icy when low-fat coconut milk is used or when all the water isn't drained from the cream. Choose a full-fat coconut milk and make sure to use only the "cream" part.

    Is collagen protein ice cream scoopable?

    This protein ice cream tastes best when enjoyed in a bowl. You can make it scoopable, but you'll want to freeze it a bit longer so that it firms up.

    Ingredients
      

    • 1 cup Coconut cream from a can, refigerated overnight
    • ½ cup pasteurized egg yolk
    • ⅛ cup Collagen powder
    • ½ teaspoon vanilla stevia
    • 1 tbs honey
    • 1.5 tbs sprinkles dairy and gluten-free

    Instructions
     

    • Open your can of coconut milk and drain any water from it. You only want the coconut cream at the top and it should be solid. Soft but solid.
    • Blend all ingredients except sprinkles in a blender very quickly (you don’t want too much air).
    • Portion into an 8x3 pan and mix in sprinkles.
    • Place in freezer to set for 30-45 minutes checking frequently.
    • Once desired texture is achieved, remove from the freezer and scoop into gluten-free ice cream cones or bowls.

    Notes

    If your coconut cream is thick this should only need 30 minutes until it is scoopable, it will be creamier. If it is a watery coconut cream that is not SUPER hard in the fridge it will need longer (roughly an hour) and in a deep freeze.
    If you do not have vanilla stevia do not increase the honey. Instead, use ½ teaspoon regular vanilla extract + a few drops or ½ bag of powdered stevia.
