    The easiest, high-protein, carnivore breakfast to feast on. This ground beef and eggs recipe is made in a skillet with just 3 ingredients. Savory bites of seasoned ground beef mixed with fluffy scrambled eggs and swirled with salsa, this high-protein breakfast scramble is versatile and delicious.

    The base of this eggs and ground beef recipe is made with only 3 ingredients but it can be adjusted and transformed in multiple ways allowing you to create a new breakfast each time you make it.

    Ingredients

    Ground beef: Theggs and ground beef skillet uses seasoned, cooked ground beef as its base. I personally make slow cooker ground beef about once a week and keep it on hand in the fridge or the freezer to make for easy, high-protein meals like this.

    Eggs: Any eggs you have in the fridge will do for this recipe and any dairy-free scrambled eggs.

    Salsa: If you haven’t tried salsa and eggs you’re missing out. Use whatever salsa fits your preferences and know that it will obviously alter the flavor a bit.

    Expert Tips To Make It

    This recipe uses already cooked and seasoned ground beef. If you only have raw beef on hand, it’ll take longer to make. Season as per your preference.

    I use a cast-iron skillet to cook in and tallow as my non-stick. You can use avocado spray or oil in place of this.

    Though the recipe is based on scrambling the eggs into the taco meat and cooking, if you want to switch it up you can just crack the eggs into the beef and enjoy them sunny-side up as well. I would top it all with salsa at this point.

    Know that there is not much seasoning added to the ground beef and eggs scramble. So, if you’re using unseasoned ground beef you’ll want to add in your own flavors.

    How To Make Ground Beef and Eggs

    Step 1: Add ground beef to a pre-greased pan, cooking over medium heat.

    Step 2: Scramble the eggs, salsa, and salt together.

    Step 3: Pour the scrambled egg mixture into the ground beef.

    Step 4: Let it cook as is until eggs are cooked through or continue stirring occasionally with a spatula to make more of a scramble and break it up. Serve immediately.

    Meal Prep and What To Do With Leftovers

    If you have leftover ground beef and eggs, let it cool fully before storing it in the fridge in an airtight container. It will stay fresh for up to 3 days.

    You can reheat the breakfast in a skillet until heated through or in intervals in the microwave.

    You can also meal prep the beef and egg scramble into egg white wraps for busy mornings. These can be frozen in parchment paper and just reheated in the oven in the morning.

    Fun hack: if you’re taking your beef and eggs on the go (which I do often) a Yeti mug keeps them warmer than any thermos I’ve tried.

    Variations and Add-Ins

    As mentioned, this whole30 breakfast scramble can be made into anything you want it to be. Below are some tasty add-ins as well as toppings to use to make it a fun, fresh flavor.

    Vegetables: When you put the ground beef into the skillet, add garlic, chopped bell peppers, mushrooms, asparagus or any other vegetable makes for a tasty beef and egg omelet.

    Cheese: If you don’t need these beef and eggs to be dairy-free, you can easily top the skillet with any cheese you like. A cheesy scramble is always a comforting one. Cheddar, grated parmesan cheese, or feta all work. Dairy-free cheese works as well I just tend not to use it as much.

    Spice: Add a punch of heat to the eggs and ground beef by popping in some sliced jalapenos, red pepper flakes, or a dash of hot sauce.

    Seasonings: My ground beef is normally seasoned with cumin, chili powder, garlic, salt, and paprika. You can adjust yours as per your preference.

    Toppings: I top my eggs and beef primarily with salsa and kimchi. However, sliced avocado, pickled onions, and sour cream are delicious options as well.

    Typically, eggs and ground beef are mixed together in a bowl for hamburgers. However, they can also be mixed in a skillet to make a breakfast scramble.

    • 3 Eggs
    • 1 cup Ground Beef Seasoned per preference
    • 2 tablespoons Salsa
    • Pinch Salt
    • Non-stick spray

    Instructions
     

    • Grease a pan and add in the cooked beef, cooking over medium heat.
    • Scramble the eggs, salsa, and salt together in a small bowl.
    • Pour the scrambled egg mixture into the ground beef.
    • Let it cook as is until the eggs are cooked through or move it around with a spatula to make more of a scramble and break it up (still ensuring the eggs are cooked through). Roughly 5-8 minutes.

    Notes

    This recipe uses already cooked and seasoned, lean ground beef. If you only have raw beef on hand, it’ll take longer to make. Also, if your beef is cooked but not seasoned you’ll want to season it as per your preference.
