When cold and flu season hits hard (which, here in Canada, feels like half the year), I don’t mess around; I prep a full arsenal of natural remedies. These elderberry syrup gummies are one of my kids' favorite immune-boosters, and I love that they’re made without any fruit juice, artificial dyes, or excess sugar.

Ingredients and Substitutions
- Elderberries: Freeze-dried elderberries have been a staple for cold and flu season for years. We use them most in homemade elderberry cough drops (And if you don't know what to do with the berries after making syrup with them, reuse them to make elderberry tea!) because they have such immune-boosting properties. However, make sure to use them cooked. Elderberries by themselves can have toxic effects.
- Acai Powder: This is an optional ingredient that packs a punch. It's a small fruit with a big hit of antioxidants, so perfect for cold season.
- Coconut Water: Super-hydrating and extremely similar to our own blood plasma. Coconut water is one of the best ways to replenish electrolytes. However, regular filtered water will work just fine.
- Gelatin: When using elderberry gummies for coughs and colds you want high-quality gelatin powder. I personally use gelatin from Perfect Supplements because like their bone broth powder it's made from pasture-raised (grass-fed) cows. It’s natural, non-GMO and pesticide, and hormone-free. Flavor Variations
Berries: I use frozen blueberries as the base here, but any other berry you have on hand will work.
Seasonings: Adding a hint of cinnamon to the elderberry gummies with honey is a great way to subtly shift the flavor.
How To Make Elderberry Gummies
Learning how to make elderberry gummies can seem daunting, as there are a few “tricks of the trade”. Watch the video in the recipe card, and here is another video on making elderberry gummies, where I go through the process live.
Step 1: Make sure to prep and measure your ingredients ahead of time, you will need to move fast.
Step 2: In a small pot, combine the elderberries and ⅓ cup of water. Bring to a boil and reduce the heat to a rolling boil. Mash the elderberries with a fork. Use a small mesh strainer to strain the water and elderberry "juice".
Step 3:In a blender, add the blueberries, acai powder, honey, elderberry juice, and coconut water and blend. Then, boil ⅓ cup of water. In a large measuring bowl, whisk the water and gelatin powder really well.
Step 4:Very quickly pour the blender mixture into the measuring cup with the water and gelatin. Continue to whisk to ensure no clumps remain. Quickly pour the mixture into the molds and pop in the fridge to set.
Important Teaching Tips
How many gummy bears the batch makes will depend on the mold you choose. Do not use the very small molds as the gummy bears are horrific to remove. Instead, use regular candy molds.
You can eat 1-2 elderberry gummies each day when trying to boost your immune system.
When making the gummy bears, you need to move fast. Gelatin binds very quickly. So, if it’s not mixed properly, you end up with problems. Common problems are:
- Half-hard gummies
- Only half the batch is too hard, and the other batch is too liquid
These are both the result of poorly mixed ingredients. So, make sure everything is ready before you mix the gelatin.
These particular homemade gummies are a bit dense for my personal liking, but my daughter loves them. Give them a shot and then tweak as needed for your next batch (lower the amount of gelatin by a tablespoon if you want softer gummies)
Elderberry Gummies Recipe FAQs
Homemade elderberry gummies can boost the immune system if they're made from high-quality ingredients. Gummies made from fruit juices and sugar are more candy-like and will not help your immune system.
Elderberry gummies need to be stored in the fridge. Keeping them at room temperature will cause them to melt slightly. If stored in the fridge in an airtight container, the gummies should last 2-3 weeks.
To make elderberry gummies from elderberry syrup, you'll want to heat the syrup along with some hot water and whisk in gelatin powder. Then, let the molds set in the fridge until the gummies are firm.
Though you can freeze homemade elderberry gummies, they don't thaw with the same tasty texture. Instead, elderberry gummies are best enjoyed within two weeks of making them.

- ½ cup frozen blueberries
- 3 tablespoons honey
- 1.5 tablespoons elderberies freeze dried
- ⅓ cup water
- 0.5 tbs acai powder
- ¼ cup coconut water
- 2.5 tbs gelatin
- ⅓ cup boiling water
Instructions
- In a small pot, combine the elderberries and ⅓ cup of water. Bring to a boil and reduce heat to a rolling boil for 5 minutes.
- Mash the elderberries with a fork. Use a small mesh strainer to strain the water and elderberry "juice" out (roughly ⅛ cup)
- In a blender, add the blueberries, acai powder, honey, elderberry juice and coconut water. Blend until smooth. Get your molds ready.
- Boil ⅓ cup of water. In a large measuring bowl, whisk the water and gelatin really well.
- Very quickly pour the blender mixture into the measuring cup with the water and gelatin. Continue to whisk to ensure no clumps remain.
- Quickly pour the mixture into the molds, taking care to re-whisk if you're moving slowly.
- Place molds into the fridge to set (about 3 hours)
