- Gluten-free flour: I find that Bobs Red Mill 1:1 Gluten-free baking flour works best, and I’ve been using gluten-free breadcrumbs I got from the grocery store, though any should work (I actually really want to try these cauliflower breadcrumbs!). I use these for gluten-free chicken cutlets, too.
- Oil: Make sure to use one with a high heat point, either avocado oil or coconut oil.
- Chicken Broth: If you don’t have homemade bone broth ready, use my busy mom's go-to: bone broth powder. Literally a game-changer for hectic weeks!

Flavor Variations
Heat: If you like a bit of spice to your chicken Thai bites, you can sprinkle in a dash of cayenne pepper to the breading or red pepper flakes into the sauce. Sliced jalapenos are always delicious, too.
Crunch: Top your chicken bites with chopped peanuts for some extra texture. I do this with my spicy chicken bites recipe a lot.
How To Make Gluten-Free Crispy Chicken Bites

Step 1: Combine the sauce ingredients and mix well.

Step 2: Mix together the egg and lemon juice and then the flour, breadcrumbs, and seasonings in another bowl.Dip the chicken into the egg and then the flour mixture and toss to coat.

Step 3: Heat the oil and cook the chicken until golden brown. Pour Thai sauce over the chicken and cook until coated and sticky.

Step 4: Serve sprinkled with fresh mint and lime juice.
Expert Tips
Cut the chicken pieces as tiny as possible. This way, you get much more crisp with every bite.
Try not to stir the chicken too much as you cook, as you’ll tear off the breading. The chicken bites will continue to cook for a couple of minutes when you add the sauce.
I find I need to put another tablespoon of oil into the pan as I’m cooking the chicken.
A little bit of sauce goes a long way; you may not need it all. Know that the more sauce you put on the chicken, the less crispy it will be. Save some to drizzle onto the bowl as a whole.
Save your sanity and use bone broth powder to whip up bone broth in a pinch. It’s the easiest and healthiest way to boost your immune system.
Sauce Options
There are two sauces you can whip up for these chicken bites. The one listed in the recipe card is tasty. However, my kiddos prefer the one below as it’s a bit sweeter.
For the other sauce option mix together:
- 1 tablespoon peanut butter
- 2 tablespoon soy sauce
- 2 tablespoon broth
- 2 tablespoons Thai sweet and spicy sauce
Storing Leftovers
Once cooled, you can store the leftover gluten-free Thai crispy chicken in the fridge in an airtight container. It will stay fresh for about 3 days.
Though you can reheat it in the microwave, it won’t have as much of a crispy texture. Instead, reheat it in a skillet until warmed through.
Due to the breading, these Thai chicken bites don’t freeze well and are best eaten fresh.
How To Serve Gluten-Free Breaded Chicken Bites
These chicken bites can be used for almost everything you can come up with. Personally, we like to serve it over a bed of steamed rice and sliced bell peppers with extra sauce (or sweet balsamic dressing) and a squirt of lime juice.. and maybe with a lavender cocktail or a vodka cranberry on "those" days.
Some other tasty options are:
- Double the sauce and mix it all with some gluten-free noodles and sautéed mushrooms or peppers
- Rolled into a wrap with crisp lettuce
- Serve on the side of roasted vegetables or vegan beet soup with extra sauce for dipping

I like to use a 1:1 gluten-free baking flour, but all-purpose flour will work too. Rice or buckwheat flour should work as well, but won’t coat the chicken as much, so the result may be a change in texture.
The secret to making tender chicken bites is not to overcook them. Overcooking chicken makes it chewy and dry.

Gluten-Free Crispy Thai Chicken Bites
Equipment

Ingredients
For the breaded chicken
- 2 Chicken breasts cut into small pieces.
- 1 Egg
- 1 Lemon juiced
- 1 Cup Gluten-free baking flour
- ½ Cup Gluten-free breadcrumbs
- 1 teaspoon Garlic powder
- ½ teaspoon Ginger powder
- ½ teaspoon Salt
- 2 tablespoons Oil may need more
For the Thai sauce
- 1 tablespoons Peanut butter
- 2 tablespoons Soy sauce
- 2 tablespoons Broth
- 1 teaspoons Ginger
Instructions
- Prepare the sauce by whisking together all the ingredients until smooth.
- In a bowl beat the egg with the lemon juice. Set it aside.
- In a separate bowl combine the flour with the breadcrumbs, garlic powder, ginger and salt and pepper.
- Dip the chicken into the egg and then transfer to the flour mixture. Toss to coat evenly with flour.
- Heat the oil in a large pan over medium heat. Add the chicken and cook for 5 minutes or until cooked through and golden brown.
- Pour the sauce over the chicken and cook for 3 more minutes stirring so the chicken gets evenly coated with the sauce.
- Serve over rice with chopped pepper, mint or basil sprigs and a lime wedge.
