Ingredients and Substitutions
Below is an image of everything you need to make gluten-free granola. Know that any of the nuts can be interchanged for others, subbing in cashews or pistachios is yummy.
Likewise, sunflower seeds can be used for pumpkin seeds it needed.
I use almond butter for my chocolate granola the most but peanut butter, or an almond hazelnut is delicious also. Of course, adding in some cinnamon or a type of vanilla is a tasty way to switch it up too.
Make sure to use raw cacao powder and not cocoa powder to reap the benefits.
Expert Tips To Make It
Use fresh nut butter so that it’s a bit runny, otherwise, it won’t mix well.
Make sure to spread the granola evenly on the baking tray and not in one big clump. When you stir it after the halfway point, re-spread it.
You don’t want it to dry out too much as it doesn’t go crispy, just burnt. So, in the last 5 minutes watch it closely. The end result is a chewy texture.
Let it cool on the pan for the full 30 minutes once out of the oven. This is where it hardens up a bit.
How To Make..
Step 1: Mix together all the dry ingredients.
Step 2: Mix the wet ingredients together in another bowl until it is mostly smooth.
Step 3: Pour wet into dry and mix. Portion the granola onto a lined baking tray and smooth it out.
Step 4: Bake in the oven string halfway through. Cool on tray.
How To Store It
Store the gluten-free protein granola once fully cooled in a glass container or mason jar in the fridge. Chilled like this, it will stay fresh for up to two weeks.
