Made with real Canadian maple syrup, this protein latte recipe delivers bold flavor with a cozy twist, and it's ready in just five minutes. It’s rich, naturally sweetened, and laced with cinnamon and vanilla to give your morning the perfect fall-inspired boost.
I love frothing up an almond-coconut milk blend for an ultra-creamy texture. Honestly, it tastes better than anything from a café. Try it iced for a refreshing pick-me-up or serve it warm and alternate between this coconut milk matcha latte and a crockpot pumpkin spice latte. Sometimes, I even pair it with a high-protein apple mug cake for the ultimate cozy combo.

💭Why You’ll Love This Recipe
Time and Money Saver: Skip the line at the coffee shop and make something even BETTER at home.
Minimal Ingredients: You probably have all the ingredients you need to whip up this dairy-free protein latte already.
Versatile: Enjoy it hot or iced and in a variety of flavors.
Ingredients and Substitutions
- Brewed Coffee: Use your favorite coffee blend and make it as strong as you like it. Though an espresso machine will give a more potent coffee flavor, you don't need one (though these Nespresso recipes sure make that purchase worth it!). Use a flavored coffee for an easy taste swap!
- Coconut milk: This makes the maple cinnamon latte ultra-rich. However, you want to use full-fat, canned coconut milk and only the thick white cream from the top if possible (learn more about types of coconut milk).
- Collagen powder: This is what gives the dairy-free latte its protein hit. Collagen powder is the purest protein out there. Here are more collagen powder recipes so you can make all sorts of goodies. I've also used beef-based protein powder for the latte, and it works well. Vegan protein powder does not though as it absorbs too much liquid,

Flavor Variations
Iced maple latte: whip together the maple latte, but don’t add the milk. Let it chill in the fridge as long as possible. Add ice to a mason jar, pour in the latte mixture, and add in almond milk until the desired flavor is achieved.
Spiced maple latte: Add a hint of cinnamon to the coffee mixture as well as sprinkle on top after frothing. A little bit goes a long way.
Mocha: Whisk in a bit of cacao powder to the latte for a chocolate coffee flavor.
How To Make A Protein Latte
The instructions below teach you how to make a protein latte with a milk frother. However, know that you can also just combine everything in a mug and use a handheld milk frother, too.
Step 1: Combine the extracts and maple syrup in your favorite glass.
Step 2: Pour in your favorite coffee blend.
Step 3: Add in the coconut milk and collagen powder into a milk frother and let it froth for 1-2 minutes.
Step 4: Using a spoon to hold the frothy milk back, pour the warmed milk into the latte and then the froth on top.
How To Make The Latte In A Slow Cooker
This maple cinnamon latte recipe is also amazing for large gatherings!
Make it in the slow cooker by:
- Quadrupling the ingredient amounts.
- Add the brewed coffee, extracts, and maple syrup to a slow cooker.
- Cook on low for 1-2 hours.
- Froth the milk and add it to the slow cooker.
- Turn the slow cooker to warm and let people serve themselves.
Know that you can also skip adding in the dairy-free milk and have a milk frother set up beside the slow cooker.
This way, your guests can add as much or as little frother milk to their maple latte as they wish!
Expert Teaching Tips
Both coconut milk and almond milk will work for the maple latte recipe, though full-fat, canned coconut milk will be creamier. I make my maple latte with coconut and homemade hemp milk for the creamiest texture.
You can make it easy and use a handheld frother and whisk them right into the mug but it won’t be as frothy.
Likewise, you can heat the milk in a small pot on the stove until frothy, also. But truthfully, a milk frother works best.
Brew your coffee slightly stronger than normal so that the maple latte retains its amazing, espresso-like flavor.
Store the leftover maple latte in the fridge in a mason jar. You can either drink it chilled by pouring it over ice or reheat it on the stove over low heat. Not too high of heat or the milk will burn.
How To Serve It
At its very base, this high-protein latte is delicious as-is, and how I drink it most often. However, if you wish to use it as a dessert or specialty coffee, you can serve it:
- Topped with Whole30 whipped cream
- Topped with whipped cream and drizzled with dairy-free coconut milk caramel sauce.
Protein Latte FAQs
Any milk will work for a latte, but your choice will change the flavor slightly. Whole milk or full-fat coconut milk are the best choices because they add a rich feel to the maple latte. Outside of that, almond milk, skim milk, and any other variations will work but won’t be as rich or as frothy.
Though lattes typically use espresso for their base, you can easily use regular brewed coffee. If you love the coffee flavor and know you’re making a latte, just brew an extra-strong batch of coffee. Likewise, you could even make a basic cold brew coffee (which tends to be stronger) and then heat it on the stove before making it into a latte.
Protein powder or collagen powder can be added to your latte with a milk frother. However, each kind of protein will yield a different texture as they absorb liquids differently.
