Made with just 6 ingredients, it’s naturally paleo and holds together at room temperature for that true fudge-like bite.     Texture: So many protein powder fudge recipes melt at room temperature. This one, however, has that classic silky texture, indulgent taste, and stays solid.

    Ingredients and Substitutions

    • Coconut oil: Because there isn’t a lot in the recipe, the fudge remains solid at room temperature (a common problem with freezer fudge!).
    • Cacao butter:  This is what gives the chocolate fudge its silky texture while keeping it solid. It’s one of the best dairy-free ingredients you can have on hand. If you don't have any, replace it with equal parts coconut oil and nut butter, but know that the fudge texture will be softer.
    • Almond butter: Any nut butter will work in the chocolate protein fudge (I've used homemade peanut butter a ton of times), and this is a fun way to change up the flavor, just like with these paleo cashew butter cookies! You want to use fresh almond butter though, so that it mixes smoothly.
    • Collagen powder: the secret ingredient in this protein fudge! In place of protein powder, the best collagen powder is used. And given that it’s one of the cleanest sources of protein, it’s a great choice!

    Flavor Variations

    You can easily dress this protein fudge recipe up for any occasion if you wish to decorate it, just like most of these dairy-free chocolate desserts! Below are a few ways we vary it.

    • Crunch: If you want to add a bit of crunch to the fudge, you can top it with toasted pecans or pistachios.. Better yet, you can swirl these into the mixture, too.
    • Sweet and savory: I love topping chocolate fudge with thick chunks of sea salt. It's the perfect flavor balance.
    • Nut butter: Almond butter is used because it's easy. However, almond hazelnut butter will give this fudge recipe a whole other flavor.

    To make the fudge holiday-specific:

    First, drizzle the fudge with dairy-free chocolate ganache. Then, sprinkle on some crushed candy canes, pink glitter, or sprinkles for whichever festivity you choose.

    Likewise, you can easily change the mold of the fudge into different celebratory shapes, just like with these vegan heart shaped cupcakes.

    How To Make Protein Fudge

    Step 1: Combine all the ingredients except for the collagen powder and honey in a small pot (or double broiler!).

    To enjoy the protein fudge, let it sit at room temperature for 5-10 minutes so that it’s soft.

    Use paleo-approved chocolate chips if you need this recipe to be paleo-friendly.

    Make sure to heat the ingredients on low and be patient. Otherwise, the peanut butter may burn and make the mixture chunky.

    Whisk in the collagen with a fork really quickly while everything is warm. This way, it doesn’t have a chance to clump.

    Because protein fudge requires no tempering, it’s best stored in the freezer until you’re ready to eat it.

    Can I put my fudge in the freezer to set?

    Fudge that has not been tempered should be placed in the freezer to set. Setting in the fridge will take hours, whereas most fudge in the freezer takes only 60-90 minutes.

    How long does protein fudge last in the freezer?

    Chocolate protein fudge can last 2-3 months in the freezer, so long as it is in an air-tight container in which it can’t get “freezer burn” on it.

    Can I use chocolate protein powder in place of collagen powder?

    Though chocolate whey protein powder may work, vegan protein powder especially absorbs much more liquid than collagen powder. Thus, using it in this recipe may make the protein fudge too thick and much more chalky.

    The recipe makes 16 small fudge bites. One serving is two pieces.
    You do need both the ⅓c almond butter and the tablespoon.
    To eat the protein fudge, let it sit at room temperature for 5-10 minutes so that it’s soft.
    Make sure to heat the ingredients on low and be patient. Otherwise, the peanut butter may burn and it will make the mixture chunky.
    You can pour the protein fudge recipe into a baking loaf lined with parchment paper or mini silicone molds. The nutrition is calculated based on molds and not a parchment paper-lined pan.
