    Chocolate Protein Fudge (Paleo)

    With 10 grams of protein per square, this chocolate protein fudge makes a tasty, bite-sized protein dessert! Silky and smooth in texture and made with only six ingredients, this chocolate fudge is naturally paleo. But best of all? It holds together at room temperature for that classic, indulgent, fudge taste.

    Looking to indulge but don’t want the calories and sugar hit that comes with it? This chocolate protein fudge is the perfect solution!

    It’s an easy dessert to pop in the freezer and take out when you need a chocolate hit. And as a Certified Nutrition Coach, I personally love that it’s low in calories but high in flavor just like protein coffee fudge.

    Plus, it’s an easy one to keep a mini stash on for times when people pop over and you want to set something out (just like this protein powder fudge recipe).

    You’ll fall in love with this protein fudge because it’s:

    • Dairy-free, gluten-free, and paleo
    • Easy to make
    • High in protein (10 grams per serving)
    • Bite-sized
    • Solid at room temperature
    • No protein powder required

    Ingredients You’ll Need

    With only six ingredients (and not one of them chocolate protein powder!), this chocolate protein fudge is easy to make in a pinch!

    Coconut oil: Because there isn’t a lot in the recipe, the fudge remains solid at room temperature (a common problem with freezer fudge!).

    Cacao butter:  this is what gives the chocolate fudge its silky texture while keeping it solid. It’s one of the best dairy-free ingredients you can have on hand.

    Almond butter: any nut butter will work in the chocolate protein fudge and this is a fun way to change up the flavor! You want to use fresh almond butter though so that it mixes smoothly.

    Dairy-free chocolate chips: I use mini chocolate chips but regular ones should work just fine. It helps sweeten the recipe while also amping up the chocolate flavor.

    Honey: opt for raw honey if possible. You don’t need a lot but you do need the extra bit of sweetness.

    Collagen powder: the secret ingredient in this protein fudge! In place of protein powder, collagen powder is used. And given that it’s one of the cleanest sources of protein, it’s a great choice!

    The chocolate chips are what give this protein fudge its chocolate flavor which means you don't need to have any cocoa powder on hand.

    Likewise, because this recipe is a "freezer fudge" you also don't need unsweetened almond milk or any kind of tempering.

    Important Teaching Tips

    To eat the protein fudge, let it sit at room temperature for 5-10 minutes so that it’s soft.

    Make sure to heat the ingredients on low and be patient. Otherwise, the peanut butter may burn and make the mixture chunky.

    Whisk in the collagen with a fork really quickly while everything is warm. This way it doesn’t have a chance to clump.

    Though regular almond butter is great, crunchy nut butter is amazing. And creamy peanut butter can most definitely be used.

    How To Make Chocolate Protein Fudge From Scratch

    1. Combine all the ingredients except for the collagen powder and honey in a small pot (or double broiler!).
    2. Heat over low until the cacao butter is just melted.
    3. Quickly whisk in the honey and collagen powder until no clumps remain.
    4. Portion into mini silicone molds and freeze for one hour.

    How To Store It

    This chocolate protein fudge is best stored in the freezer separated between sheets of parchment paper. Like this, it will stay good for up to 3 months.

    When you're ready to enjoy it, let it sit at room temperature for 30 minutes.

    You can store the fudge in the fridge in an airtight container as well but know that it will be much softer to the touch.

    Variations

    You can easily dress this protein fudge up for any occasion if you wish to decorate it! Or, just make a few simple swaps so you have something new to munch on every time you make it.

    Crunch: If you want to add a bit of crunch to the fudge, you can top it with toasted pecans or pistachios.. Better yet, you can swirl these into the mixture too.

    Sweet and savory: I love topping chocolate fudge with thick chunks of sea salt. It's the perfect flavor balance.

    Nut butter: Almond butter is used because it's easy. However, almond hazelnut butter will give this fudge recipe a whole other flavor.

    To make the fudge holiday specific:

    First, drizzle the fudge with dairy-free chocolate ganache. Then, sprinkle on some crushed candy canes, pink glitter, or sprinkles for whichever festivity you choose.

    Likewise, you can easily change the mold of the fudge into different celebratory shapes.

    How do you store protein fudge?

    Because peanut butter fudge requires no tempering, it’s best stored in the freezer until you’re ready to eat it.

    Can I put my fudge in the freezer to set?

    Fudge that has not been tempered should be placed in the freezer to set. Setting in the fridge will take hours whereas most fudge in the freezer takes only 60-90 minutes.

    How long does protein fudge last in the freezer?

    Freezer fudge can last 2-3 months in the freezer so long as it is in an air-tight container in which it can’t get “freezer burn” on it.

    Can I use chocolate protein powder in place of collagen powder?

    Though chocolate whey protein powder may work, vegan protein powder especially absorbs much more liquid than collagen powder. Thus, using it in this recipe may make the protein fudge too thick and much more chalky.

    Ingredients
      

    • 2 tbs Coconut oil
    • 3 tbs Cacao butter
    • ⅓ cup Almond butter
    • 1 tbs Almond butter
    • ¼ cup Collagen powder
    • ⅓ cup Mini chocolate chips
    • 2 tbs Honey

    Instructions

    Notes

    The recipe makes 16 small fudge bites. One serving is two pieces.
    You do need both the ⅓c almond butter and the tablespoon.
