    The perfect hiking snack! These chickpea flour trail mix cookies are a tasty, homemade option to keep you fueled up on-the-go. Allergy-friendly and loaded with healthy fats, these cookies are a hit with kiddos!

    Cookies are a staple in my house because truthfully, without them I'd be lost! And while I love a healthy chocolate chip cookie, sometimes I just want a bit more. These chickpea trail mix cookies are definitely the "more" I aim to go for! Loaded with healthy fats and fuel- they make a great snack for small tummies!

    Ingredients
      

    • 1.5 cups chickpea flour
    • 1 teaspoon baking powder
    • ¼ cup coconut oil measured solid
    • 1 tablespoon cinnamon
    • 1 teaspoon sea salt
    • 2 tablespoons flax seed group
    • ½ cup walnuts chopped
    • ½ cup shredded coconut
    • 1 tbs cane sugar
    • ¼ cup almond butter
    • ¼ cup maple syrup
    • 1 tbs maple syrup
    • 1 teaspoon vanilla extract
    • ⅛ cup almond milk
    • 4 tablespoons mini chocolate chips enjoy life brand

    Instructions
     

    • Preheat oven to 350 degrees and line a baking tray with parchment paper, tin foil or a silicone mat.
    • In a large bowl, combine all dry ingredients except chocolate chips.
    • Melt coconut oil and combine with remaining wet ingredients except for almond milk. Whisk until smooth. Pour the wet mixture into the dry and stir until everything looks coated.
    • Add in the almond milk and continue to mix. Fold in chocolate chips. Chickpea flour absorbs liquid so it the batter is more sticky/held together than smooth or runny.
    • Using an ice cream scoop, portion the cookies onto the baking tray. Use a fork, gently press the cookies down slightly.
    • Bake for 6 minutes, turn the pan and cook for another five. Remove from the oven and let sit on the pan to cool.
    • They won't look done but they firm up once cooled.

    Why The Chickpea Flour Cookies Rock

    It's no secret that I love cookies but what you may not know about me is that I eat cookies just about every day. Really, it's true!

    Which is why I need my cookies to be a little healthier than the norm.

    Trail mix cookies are the perfect blend of delicious, decadent, indulgent and healthy in my opinion. Not only are you getting a tasty cookie but you're also reaping the benefits of healthy fats fiber and oh so many nutrients.

    Have you ever used chickpea (garbanzo) flour? Because if not, this is a great introduction for you!

    Garbanzo flour is naturally high in fiber and gram for gram have a decent amount of protein too. I love using it because the flour contains so many healthy vitamins and minerals (folate, B6,  zinc etc) but also because it keeps you full.

    They also contain a host of healthy fats, specifically omega-three fats, from all the nuts and seeds. One thing many of us actually need in our diets is more omega-three fatty acids. This is because in our day to day food choices we take in a lot of omega-six fats and they need to be balanced.

    Since omega-three fats are known for reducing inflammation, it doesn't hurt to boost your intake!

    These chickpea flour trail mix cookies taste decadent thanks to all the fats but are also extremely healthy. This means they make a delicious dessert but also double as a healthy snack! For dessert purposes, my daughter adores these cookies and I love knowing that all of the ingredients are real, unprocessed whole foods. So basically, these are about the only cookies she'll be eating.

      Cookies are a huge hit in my house. I love how healthy these really are! You can still kind of pretend it’s not, because well, it’s a cookie! But you won’t feel bad after you eat it lol.
