    Gluten-Free Thai Crispy Chicken

    Made in just 25 minutes with a crisp texture and peanut butter-based sauce, this gluten-free Thai crispy chicken recipe is perfect for quick, comfort food. With easy pantry staples as the base and breaded with gluten-free breadcrumbs, it’s a chicken recipe that comes together quickly and tastes like pure comfort.

    You’ll never go back to takeout once you’ve tried these Thai chicken bites! Breaded with egg and gluten-free breadcrumbs the chicken is fried until crispy and then sauces with a peanut butter umami-flavoured sauce for a delicious Thai flavor.

    As a Certified Nutrition Coach, I love whipping up this recipe to make for a tasty weeknight dinner or keeping some chicken bites in the fridge for easy snacking (I even throw them into this chicken omelet).

    Serve these Thai bites with a steamed rice and roasted vegetables, mixed into gluten-free pasta, or make it into a bowl with leftover ingredients from the fridge. It’s delicious no matter what.

    Quick: Though breading chicken can be effort-based, this gluten-free breaded chicken really only takes 10 minutes of prep time and cooks in another 10 so that you have dinner on the table in about 25 minutes.

    Comfort food: With a savory Thai flavor and crunch in every bite these Thai chicken bites are better than takeout.

    Versatile: You can adjust the seasonings to create new flavors or serve the crispy chicken bites with different sides to make new meals.

    Allergy-friendly: This dinner recipe is not only gluten-free but dairy-free as well.

    Ingredients and Substitutions

    Below is a glimpse of the ingredients you need to make gluten-free Thai crispy chicken. Most of the things you need are basic gluten-free pantry staples.

    For flour, I find that Bobs Red Mill 1:1 Gluten-free baking flour works best and I’ve been using gluten-free breadcrumbs I got from the grocery store though any should work (I actually really want to try these cauliflower breadcrumbs!).

    For the oil make sure to use one with a high heat point, either avocado oil or coconut oil. And of course, if you don’t have homemade bone broth ready, use my busy mom go-to: bone broth powder. Literally a game-changer for hectic weeks!

    Expert Tips

    Cut the chicken pieces as tiny as possible. This way you get much more crisp with every bite.

    Try not to stir the chicken too much as you cook as you’ll tear off the breading. The chicken bites will continue to cook for a couple of minutes when you add the sauce.

    I find I need to put another tablespoon of oil into the pan as I’m cooking the chicken.

    A little bit of sauce goes a long way, you may not need it all. Know that the more sauce you put on the chicken the less crispy it will be. Save some to drizzle onto the bowl as a whole.

    Save your sanity and use bone broth powder to whip up bone broth in a pinch. It’s the easiest and healthiest way to boost your immune system.

    How To Make It

    Step 1: Combine the sauce ingredients and mix well.

    Step 2: Mix together the egg and lemon juice and then the flour, breadcrumbs, and seasonings in another bowl.

    Step 3:Dip the chicken into the egg and then the flour mixture and toss to coat.

    Step 4: Heat the oil and cook chicken until golden brown.

    Step 5:Pour Thai sauce over the chicken and cook until coated and sticky.

    Step 6: Serve sprinkled with fresh mint and lime juice.

    Sauce Options

    There are two sauces you can whip up for these chicken bites. The one listed in the recipe card is tasty. However, my kiddos prefer the one below as it’s a bit sweeter.

    For the other sauce option mix together:

    • 1 tablespoon peanut butter
    • 2 tablespoon soy sauce
    • 2 tablespoon broth
    • 2 tablespoons Thai sweet and spicy sauce

    Storing Leftovers

    Once cooled, you can store the leftover gluten-free Thai crispy chicken in the fridge in an airtight container. It will stay fresh for about 3 days.

    Though you can reheat it in the microwave, it won’t have as much of a crispy texture. Instead, reheat it in a skillet until warmed through.

    Due to the breading, these Thai chicken bites don’t freeze well and are best eaten fresh.

    How To Serve Gluten-Free Breaded Chicken Bites

    These chicken bites can be used for almost everything you can come up with. Personally, we like to serve it over a bed of steamed rice and sliced bell peppers with extra sauce and a squirt of lime juice.

    Some other tasty options are:

    • Double the sauce and mix it all with some gluten-free noodles and sautéed mushrooms or peppers
    • Rolled into a wrap with crisp lettuce
    • Serve on the side of roasted vegetables with extra sauce for dipping

    Flavor Variations

    Heat: If you like a bit of spice to your Thai chicken, you can sprinkle in a dash of cayenne pepper to the breading or red pepper flakes into the sauce. Sliced jalapenos are always delicious too.

    Crunch: Top your chicken bites with chopped peanuts for some extra texture.

    Frequently Asked Questions

    Which flour is best for breaded chicken?

    I like to use a 1:1 gluten-free baking flour but all-purpose flour will work too. Rice or buckwheat flour should work as well but won’t coat the chicken as much so the result may be a change in texture.

    Ingredients
      

    For the breaded chicken

    • 2 Chicken breasts cut into small pieces.
    • 1 Egg
    • 1 Lemon juiced
    • 1 Cup Gluten-free baking flour
    • ½ Cup Gluten-free breadcrumbs
    • 1 teaspoon Garlic powder
    • ½ teaspoon Ginger powder
    • ½ teaspoon Salt
    • 2 tablespoons Oil may need more

    For the Thai sauce

    • 1 tablespoons Peanut butter
    • 2 tablespoons Soy sauce
    • 2 tablespoons Broth
    • 1 teaspoons Ginger

    Instructions
     

    • Prepare the sauce by whisking together all the ingredients until smooth.
    • In a bowl beat the egg with the lemon juice. Set it aside.
    • In a separate bowl combine the flour with the breadcrumbs, garlic powder, ginger and salt and pepper.
    • Dip the chicken into the egg and then transfer to the flour mixture. Toss to coat evenly with flour.
    • Heat the oil in a large pan over medium heat. Add the chicken and cook for 5 minutes or until cooked through and golden brown.
    • Pour the sauce over the chicken and cook for 3 more minutes stirring so the chicken gets evenly coated with the sauce.
    • Serve over rice with chopped pepper, mint or basil sprigs and a lime wedge.
