    Protein Powder French Toast

    This protein powder French toast comes in with a whopping 14 grams of protein per serving. With all the classic indulgence of a weekend brunch but the potency of more fuel, this protein French toast is a recipe you’ll want to keep on hand.

    Though a protein smoothie or even protein pancakes are wonderful after a workout, there is nothing more comforting than protein powder French toast after a Saturday morning sweat session.

    And this gluten-free French toast recipe only needs six ingredients to make that happen.

    As a Certified Nutrition Coach, this is a recipe I make frequently with the kids because it’s:

    • Dairy-free and gluten-free making it great for house allergies
    • 6 ingredients means that this protein French toast is easy to make
    • Breakfast or brunch  you can make this recipe as indulgent or easy as you like by changing toppings
    • Protein-packed with 14 grams of protein per serving this gluten-free French toast recipe isn’t just for indulgent, late-morning breakfasts

    Ingredients You Need

    Just like this vanilla cinnamon protein French toast, this version requires very few ingredients. Making it a total busy mom win.

    Gluten-free bread: any should work, I personally use the one from Costco because it’s normally cheapest.

    Vegan protein powder: the protein powder for this recipe works best if it’s vegan as it helps absorb liquid. I went with chocolate protein powder (see notes below).

    Eggs: you only need one and unfortunately egg whites don’t work as well. Creation eggs and flax eggs haven’t been tried with this protein powder French Toast recipe.

    Maple syrup: you want a hint of sweetness in the mixture to make it extra delicious! This will depend slightly on how sweet your protein powder is though. And know that honey doesn’t tend to mix as well.

    Yogurt: grab whatever non-dairy yogurt you have on hand in the fridge. I use coconut yogurt the most but a nut-based yogurt will be fine. Greek yogurt will work as well but you may not get as much out of the batter because it’s thicker. However, it will bump up the protein intake.

    Almond milk: any non-dairy milk will work, we actually use homemade hemp milk the most.

    How To Make Protein Powder French Toast

    1. Scramble the eggs, yogurt, maple syrup, and almond milk well.
    2. Add in the protein powder and keep scrambling as you do.
    3. Heat a non stick pan over medium heat.
    4. Dip each slice of bread in the egg mixture making sure to coat both sides.
    5. Once the pan is hot, place the bread in it to cook. Flip when the bottom has turned a slight brown.
    6. Cook until the other side is crispy and brown.
    7. Top with your favorites.

    Which Protein Powder To Choose

    This protein French Toast recipe was made with a Genuine Health’s Fermented Vegan Chocolate Protein Powder.

    The kind of protein powder you choose will matter as not all vegan protein powders are made the same. Some absorb more liquid than others and so the texture and flavor can be different.

    Made with 20 grams of plant-based protein, this vegan protein powder is dairy-free, gluten-free, non-GMO, and certified organic. It’s also been voted one of the best-tasting vegan protein powders.

    But best of all is that this protein is fermented. This helps break down the “anti-nutrient” in grains, nuts, seeds, and legumes that often causes bloating.

    Important Teaching Tips & Storing

    The recipe uses 2-3 slices of bread depending on the protein powder and how much you let it absorb. The nutritional value is set to 2 servings which is one full slice of bread each.

    You can easily change the flavor of the high protein French toast by changing the protein powder. Vanilla protein powder or caramel protein will come out delicious.

    This protein French toast recipe should work with whey protein powder as it absorbs less liquid (so you’d get three pieces of bread in) but I haven’t tried it. The same goes with this crock pot French toast casserole.

    Protein French toast is best served fresh. However, you can use it as a meal prep recipe! Just make it and pop it in the fridge in an airtight container for the next day and then toast it lightly. It comes out pretty yummy and I do this with the kids for quick breakfasts.

    Vegan protein powder does clump a bit when mixed, if this bugs you then you’ll need to blend the mixture. If not, just whisk as normal and know it won’t hurt you 😉

    Can you mix eggs with protein powder?

    Though eggs are already high in protein, you can add in some more by mixing them with protein powder. Know that whey protein powder blends into the eggs a little bit easier where as a vegan protein powder blends better with a handheld mixer or will have a few thicker spots.

    Can you make protein French toast ahead of time?

    Yes! You can actually make French toast in advance for meal prep and then either reheat it briefly in a pan or pop the pieces of bread into a toaster. This makes high protein French toast a really easy breakfast idea for busy mornings.

    Is protein French toast a good meal after a workout?

    Because this gluten-free French toast recipe is so high in protein, it makes for a great post-workout meal. The balance of carbs and protein means your body is getting the fuel and energy replenishments it needs.
