With all the classic indulgence of a weekend brunch but the potency of more fuel, this high protein French toast is a recipe you’ll want to keep on hand.
Heat a non stick pan over medium heat (a little over medium).
Scramble the eggs, yogurt, maple syrup, and almond milk well. Add the cinnamon if using.
Add in the chocolate protein powder and keep scrambling as you do.
Dip each slice of bread in the egg mixture making sure to coat both sides.
Once the pan is hot, place the bread in it to cook. Flip when the bottom has turned a slight brown.
Cook until the other side is crispy and brown.
Top with your favorites.

Notes
The recipe uses 2-3 slices of bread, depending on the protein powder and how much you let it absorb. The nutritional value is set to 1 serving, which is two full slices of bread.
Greek yogurt works in the recipe, but it may yield fewer servings as it's thicker.
Protein French toast is best served fresh. However, you can use it as a meal prep recipe! Just make it and pop it in the fridge in an airtight container for the next day, and then toast it lightly.
Vegan protein powder does clump a bit when mixed, if this bugs you then you’ll need to blend the mixture. If not, just whisk as normal and know it won’t hurt you 😉
If you need a higher protein breakfast, serve the French toast with a side of dairy-free scrambled eggs.
