- Canned pumpkin puree: Make sure to use real canned pumpkin puree and not the pumpkin pie version (skip the sugar). This is the base for pumpkin protein overnight oats and pumpkin protein donuts, too!
- Coconut milk: You need canned coconut milk to replace the heavy cream normally added to a latte, this also helps keep it dairy-free (learn more about dairy-free for beginners). Canned coconut milk (one of the types of coconut milk) makes the homemade pumpkin spice latte ultra-creamy and rich-tasting. You may want more on hand as well to make coconut whipped cream for the topping.
- Collagen powder: This gives your pumpkin spice latte a step up on nutrition! Quality collagen powder is one of the cleanest sources of protein and makes this slow cooker latte recipe double potent. It it totally optonal but totally doable.

Spices: Adjusting the seasonings in the crockpot pumpkin latte is an easy way to change the taste. Add a sprinkle of cloves or vanilla extract to start.
Dairy-free mocha latte: Blend 1-2 tablespoons of cacao powder into the mix for a chocolate mocha taste.

Step 2: Stir until everything is mixed and dissolved.
Step 3: Simmer on low for 2 hours, stirring ocassionally.
Step 4: Whisk in the collagen powder and turn the slow cooker to warm.
Expert Tips
Though the collagen powder isn’t necessary, it not only gives the homemade pumpkin spice latte a bit of extra fuel but thickens it up a bit as well.
You can add chilled coffee to the slow cooker instead of freshly brewed, you may just need to whisk it a few more times as it heats so that the pumpkin combines.
If using this slow cooker pumpkin spice latte at a gathering, just leave it on warm once you’ve whisked in the collagen. Know that it does thicken slightly.
Make sure to brew your coffee strong as most lattes use espresso as the base.
The coconut milk pumpkin spice latte recipe as-is, isn’t overly sweet. It is much more coffee based. If you prefer a sweeter latte, add another ⅛ cup of maple syrup. Or, make it as is and alter it cup by cup.
Know that because this pumpkin latte recipe uses coconut milk, it is rich. If you want to thin it out you can easily add almond milk to the brew (or opt to split the coconut milk with almond milk).
How To Serve It

Store leftover pumpkin spice latte in a mason jar in the fridge for 3-4 days. Either reheat it in a slow cooker or on a stove over low heat or blend it with some ice and extra coconut milk into an iced pumpkin spice latte. This works for dairy-free crockpot hot chocolate too.
You can make a slow cooker pumpkin latte decaf by replacing the regular coffee with drcafinated coffee of your choice. You may want to brew a strong batch though as decaf coffee tends to not be as flavorful.
Any sweetener can be used when making a dairy-free pumpkin spice latte. Some common ones are maple syrup, honey, agave, coconut nectar, and coconut palm sugar.
