It’s the kind of drink that makes your whole house smell like fall while it simmers away in the slow cooker, ideal for girls’ night, brunch, or sipping while your kids dart between houses trick-or-treating.

    💭Why You'll Love It

Easy to make: Made with only 7 ingredients and prepped in just 5 minutes.

Healthy: Naturally dairy-free, gluten-free, and paleo, this pumpkin spice latte with coconut milk is also packed with protein.

Pumpkin spice flavor: The most delicious fall flavor wrapped up in a big batch!

    Ingredients and Substitutions

Ingredients to make slow cooker pumpkin spice latte with text labels over each one.
    • Brewed coffee: Use your preferred coffee and make it as strong as you normally would. I prefer a caffeine kick to my lattes, so I make mine pretty strong.
    • Canned pumpkin puree: Make sure to use real canned pumpkin puree and not the pumpkin pie version (skip the sugar). This is the base for pumpkin protein overnight oats and pumpkin protein donuts, too!
    • Coconut milk: You need canned coconut milk to replace the heavy cream normally added to a latte, this also helps keep it dairy-free (learn more about dairy-free for beginners). Canned coconut milk (one of the types of coconut milk) makes the homemade pumpkin spice latte ultra-creamy and rich-tasting. You may want more on hand as well to make coconut whipped cream for the topping.
    • Collagen powder: This gives your pumpkin spice latte a step up on nutrition! Quality collagen powder is one of the cleanest sources of protein and makes this slow cooker latte recipe double potent. It it totally optonal but totally doable.

    Flavor Variations

Spices: Adjusting the seasonings in the crockpot pumpkin latte is an easy way to change the taste. Add a sprinkle of cloves or vanilla extract to start.

Dairy-free mocha latte: Blend 1-2 tablespoons of cacao powder into the mix for a chocolate mocha taste.

Make it iced: If you have leftover latte, let it chill and then pour it over a glass of ice with some extra almond milk to thin it out. Or add the latte mixture, 2 ice cubes, more milk, and a dash of syrup to a high-powered blender and blend until smooth.

Indulgence:Top with something like cinnamon syrup for a blissful flavor.

Fun fact, you can also use this gluten-free pumpkin spice latte as the base for something like espresso overnight oats to switch up the flavor!

How To Make a Crockpot Pumpkin Spice Latte

Black slow cooker with coffee, coconut milk, pumpkin pie spice, and pumpkin in it with cinnamon sticks around it.

Step 1: In a crockpot, combine the brewed coffee, canned pumpkin, spices, coconut milk, and maple syrup.

Step 2: Stir until everything is mixed and dissolved.

Step 3: Simmer on low for 2 hours, stirring ocassionally.

Gluten-free pumpkin spice latte being poured into a glass with cinnamon, pumpkins and another glass around it.

Step 4: Whisk in the collagen powder and turn the slow cooker to warm.

    Expert Tips

Though the collagen powder isn’t necessary, it not only gives the homemade pumpkin spice latte a bit of extra fuel but thickens it up a bit as well.

You can add chilled coffee to the slow cooker instead of freshly brewed, you may just need to whisk it a few more times as it heats so that the pumpkin combines.

If using this slow cooker pumpkin spice latte at a gathering, just leave it on warm once you’ve whisked in the collagen. Know that it does thicken slightly.

Make sure to brew your coffee strong as most lattes use espresso as the base.

The coconut milk pumpkin spice latte recipe as-is, isn’t overly sweet. It is much more coffee based. If you prefer a sweeter latte, add another ⅛ cup of maple syrup. Or, make it as is and alter it cup by cup.

Know that because this pumpkin latte recipe uses coconut milk, it is rich. If you want to thin it out you can easily add almond milk to the brew (or opt to split the coconut milk with almond milk).

    How To Serve It

The best part about a homemade pumpkin latte is that it can be dressed up or enjoyed as is just like slow cooker banana bread.

If you’re going for a full Starbucks copycat or ultimate indulgence, serve the pumpkin spiced latte on the side of coconut flour sugar cookies and topped with any or all of the following:

    • Dairy-free whipped cream
    • Sprinkled cinnamon
    • Dairy-free caramel sauce

    Crockpot Pumpkin Spice Latte FAQs

How do you store leftover crockpot pumpkin spice latte?

Store leftover pumpkin spice latte in a mason jar in the fridge for 3-4 days. Either reheat it in a slow cooker or on a stove over low heat or blend it with some ice and extra coconut milk into an iced pumpkin spice latte. This works for dairy-free crockpot hot chocolate too.

Can I make crockpot pumpkin spice latte with decaf coffee?

You can make a slow cooker pumpkin latte decaf by replacing the regular coffee with drcafinated coffee of your choice. You may want to brew a strong batch though as decaf coffee tends to not be as flavorful.

What sweetener can I use to make pumpkin spice latte with coconut milk?

Any sweetener can be used when making a dairy-free pumpkin spice latte. Some common ones are maple syrup, honey, agave, coconut nectar, and coconut palm sugar.

    • 4 cups freshly brewed coffee
    • ¼ cup canned pumpkin puree
    • 2 teaspoon cinnamon
    • 3 teaspoon pumpkin pie spice
    • ⅓ cup maple syrup
    • 1 ⅓ cup coconut milk full fat
    • ¼ cup collagen powder

    Instructions

    • In a slow cooker, combine the brewed coffee, canned pumpkin, spices, coconut milk, an dmaple syrup.
    • Use a whisk to whisk until smooth.
    • Cook on low for 2 hours.
    • Whisk in the collagen powder and turn the slow cooker to low.

    Notes

Though the collagen powder isn’t necessary, it not only gives the latte a bit of extra fuel but thickens it up a bit as well. If you omit the collagen powder, it makes this into a vegan pumpkin spice latte.
You’ll want to use pure maple syrup in the recipe. This scales back on processed sugars and gives it a much better flavor.
