    With 30 grams of protein, this single serving protein cookie is a healthy way to indulge a craving. Made with a peanut butter and chocolate chip flavor, this protein cookie can be whipped up and enjoyed in just 10 minutes.

    This single serving protein cookie is soft and loaded with a gooey chocolate chip center with all the comfort of peanut butter and honey.

    If you need to curb a craving while still reaping the benefits of a high protein diet, this is the recipe to keep on hand.

    Ingredients and Substitutions

    The protein powder you choose will affect the taste and texture of the protein cookie. Learn more about choosing a protein powder for your goals.

    If you don’t love your protein powder, don’t make this recipe as it comes out as a dominant flavor.

    You can use chocolate or vanilla protein powder to change up the flavor easily enough (chocolate peanut butter is always yummy!).

    You can use maple syrup in place of honey if you want to.

    Expert Tips To Make It

    Less is more when it comes to this single-serve cookie. It won’t look done when you take it out of the oven, but it will continue to cook. So, if in doubt, cook it for less time.

    Vegan protein powder works best but not fermented protein powder as that will absorb too much liquid and give the cookie a chalky taste.

    Use fresh peanut butter and let it come to room temperature first. This makes it easier to mix into the batter. Hard nut butter at the bottom of the jar doesn’t work.

    How To Make..

    Step 1: Mix together all wet ingredients until smooth.

    Step 2: Add in the remaining ingredients.

    Step 3: Mix well and portion onto a lined cookie sheet with a silicone spatula to smooth it out.

    Step 4: Bake for 8 minutes and let cool on the pan fully.

    Flavor Variations

    Below are a few ways to switch up the taste of the single-serving protein cookie without much effort.

    Nut butter: Almond butter or almond hazelnut is a great swap and gives an almost caramel-like taste.

    Chocolate: Use a chocolate protein powder for a double chocolate taste.

    White chocolate chips: If you have dairy-free white chocolate chips they’re a great way to change the taste.

    Toppings and mix-ins: Anything goes here, you can use sprinkles, crushed M&Ms, chopped pecans, or a mix of a couple of toppings to make the protein cookie unique.

    • 1 Silicone cookie sheet
    • Measuring Cups and Spoons

    Ingredients
      

    • ¼ cup Vegan vanilla protein powder I used Botanica Perfect protein
    • 1 tablespoon Peanut butter
    • ¼ cup Egg whites
    • 1 tablespoon Chocolate chips
    • ½ teaspoon Baking powder
    • 1.5 tablespoons Honey
    • ½ teaspoon Vanilla extract

    Instructions
     

    • Preheat the oven to 350F.
    • Mix together all wet ingredients until smooth.
    • Add in the remaining ingredients.
    • Mix until everything is combined, it will be thick.
    • Use a silicone spatula to portion the batter out onto a lined cookie sheet. You’ll need to shape it manually.
    • Bake for 8-9 minutes and remove it from the oven even though it doesn’t look done.
    • Let cool for 10-15 minutes on the pan.

    Notes

    Less is more when it comes to this single serve cookie. It won’t look done when you take it out of the oven, but it will continue to cook. So, if in doubt, cook it for less time.
    Ideally you let it cool for a solid 15-20 minutes. However, I have totally stood at the counter and eaten it out of the oven.
    Vegan protein powder works best but not fermented protein powder as that will absorb too much liquid and give the cookie a chalky taste. Even a pea-based vegan protein powder will absorb more liquid so you may need to add 1-2 tbs of dairy-free milk (you'll know if the batter is super thick and hard to spread).
    Use fresh peanut butter and let it come to room temperature first. This makes it easier to mix into the batter. Hard nut butter at the bottom of the jar doesn’t work.
