    Brewed coffee: use your preferred coffee and make it as strong as you normally would. I prefer a caffeine kick to my lattes so I make mine pretty strong.

    Canned pumpkin puree: make sure to use real canned pumpkin puree and not the pumpkin pie version (skip the sugar). This is the base for pumpkin protein overnight oats too!

    Cinnamon & pumpkin pie spice: crucial to the recipe the fresher your spices are the more potent the latte will be.

    Coconut milk: this replaces the heavy cream normally added to a latte and helps keep it dairy-free (learn more about dairy-free for beginners). Plus, coconut milk makes the homemade pumpkin spice latte creamy and rich tasting. You may want more on hand as well to make coconut whipped cream for the topping.

    Maple syrup: how much you add is up to you and your sweet preference. Regardless, opt for real maple syrup for the best flavor.

    Collagen powder: give your pumpkin spice latte a step up on nutrition! Collagen powder is one of the cleanest sources of protein and makes this slow cooker latte recipe double potent.

    Know that you can easily add in a dash of vanilla extract and cloves for extra flavor.

    How To Make It

    1. In a crockpot, combine the brewed coffee, canned pumpkin, spices, coconut milk, and maple syrup.
    2. Use a whisk to whisk until smooth.
    3. Cook on low for 2 hours.
    4. Whisk in the collagen powder and turn the slow cooker to low.

    Important Teaching Tips

    Though the collagen powder isn’t necessary, it not only gives the homemade pumpkin spice latte a bit of extra fuel but thickens it up a bit as well.

    You’ll want to use pure maple syrup in the recipe. This scales back on processed sugars and gives it a much better flavor.

    You can add chilled coffee to the slow cooker instead of freshly brewed, you may just need to whisk it a few more times as it heats so that the pumpkin combines.

    If using this slow cooker pumpkin spice latte at a gathering, just leave it on warm once you’ve whisked in the collagen. Know that it does thicken slightly.

    Make sure to brew your coffee strong as most lattes use espresso as the base.

    The coconut milk pumpkin spice latte recipe as-is, isn’t overly sweet. It is much more coffee based. If you prefer a sweeter latte, add another ⅛ cup of maple syrup. Or, make it as is and alter it cup by cup.

    Know that because this pumpkin latte recipe uses coconut milk, it is rich. If you want to thin it out you can easily add almond milk to the brew (or opt to split the coconut milk with almond milk).

    The best part about a homemade pumpkin latte is that it can be dressed up or enjoyed as is!

    If you’re going for a full Starbucks copycat or ultimate indulgence, serve the pumpkin spiced latte topped with any or all of the following:

    • Dairy-free whipped cream
    • Sprinkled cinnamon
    • Dairy-free caramel sauce

    How To It An Iced Pumpkin Spiced Latte

    If you have some crockpot pumpkin spice latte left over, don’t just throw it out! Instead, chill the mixture and then you have two options:

    1. Simply pour it over a glass of ice with some extra almond milk to thin it out.
    2. Add the latte mixture, 2 ice cubes, more milk, and a dash of syrup to a high-powered blender and blend until smooth.

    Top either option with any of the latte toppings above or something like cinnamon syrup for a blissful flavor.

    Fun fact, you can also use this gluten-free pumpkin spice latter as the base for something like espresso overnight oats to switch up the flavor!
