    Peanut Butter Chocolate Chip Protein Cookies

    With a light, flakey outer shell and a soft inside, these peanut butter chocolate chip protein cookies are reminiscent of the classic flavor! Naturally gluten-free, these chocolate chip cookies use vegan protein powder to bind to the peanut butter to make a smooth, indulgent treat.

    As if you needed an excuse to use up the homemade peanut butter you have on hand. Let’s be honest, peanut butter goes with everything.

    But if you’re in a sharing mood, these chocolate chip protein cookies are the way to go.

    Made to resemble your favorite cookies as a kid, these chocolate chip peanut butter cookies come with a fun twist: protein!

    You’ll fall in love with this recipe because they’re:

    • Dairy-free, gluten-free, and paleo
    • Easy to make
    • High in protein (7 grams)
    • A hit with non-fitness people too
    • A classic flavor

    Ingredients You’ll Need

    Since most of my readers are busy moms and I’m a busy mom myself, I always strive to use up ingredients I know we all have on hand.

    If you have a well-stocked gluten-free pantry, you’ll already have everything you need to make this recipe as well as these no bake protein cookies.

    Vegan protein powder: the kind you choose will affect the flavor and texture of the gluten-free protein cookies (learn more below).

    Egg: nothing fancy, any egg you have on hand will work.

    Natural peanut butter: you need the oils from natural peanut butter for this recipe to work. Likewise, make sure to use a fresh container. The hard stuff on the bottom of an old container won’t mix well. Love peanut butter? Hang on to these protein peanut butter cups and these gluten-free peanut butter recipes too.

    Baking powder: these peanut butter cookies rise but only the tiniest bit.

    Baking soda: you need both baking soda and baking powder to get the best texture.

    Honey: these peanut butter cookies are only sweetened with just honey and chocolate chips (no coconut sugar!). If your honey is on the hard side make sure to warm it a bit.

    Salt: salt is needed both for flavor but also for texture.

    Chocolate chips: I use mini chocolate chips as they are distributed more evenly. Make sure to use paleo chocolate chips as you need them.

    Avocado oil: this helps with the texture of the cookies so make sure not to sub for coconut oil.

    How To Make Protein Cookies

    1. Preheat the oven to 325 degrees Fahrenheit.
    2. Whisk together the egg, peanut butter, oil, and honey until smooth.
    3. Add in the remaining ingredients.
    4. Mix until everything is combined (it will look dry).
    5. Portion the cookies out onto a baking sheet and bake for 15 minutes.
    6. Let cool on the tray.

    Important Teaching Tips

    When you mix the batter ingredients together, it looks really dry. You’ll need to shape the cookies a bit when you portion them out.

    Life is easier when you line the baking sheet with parchment paper or a silicone cookie sheet.

    Make sure to press the cookies down slightly, they do rise up a bit.

    When the cookies come out of the oven they won’t look done and they’ll be extremely delicate. Let them cool fully on the pan before moving.

    If you store the peanut butter protein cookies in the fridge, know that they will firm up a bit.

    Can you bake with protein powder?

    Yes! Protein powder, like most things can be baked safely. As it is not “raw” and has already been dehydrated, baking protein powder will not ruin it or destroy its benefits.

    Can I use chocolate protein powder in place of vanilla?

    Sure! Swapping the flavor of the protein powder is a great way to change up the flavor of the protein cookies. So long as it is a vegan protein powder it will work.

    How do you store peanut butter protein cookies?

    These protein cookies are best stored in the fridge. Though they can remain on the counter, they will remain slightly delicate. Storing them in the fridge helps them firm up a bit more.
