Ingredients You’ll Need
Since most of my readers are busy moms and I’m a busy mom myself, I always strive to use up ingredients I know we all have on hand.
If you have a well-stocked gluten-free pantry, you’ll already have everything you need to make this recipe as well as these no bake protein cookies.
Vegan protein powder: the kind you choose will affect the flavor and texture of the gluten-free protein cookies (learn more below).
Egg: nothing fancy, any egg you have on hand will work.
Natural peanut butter: you need the oils from natural peanut butter for this recipe to work. Likewise, make sure to use a fresh container. Baking powder: these peanut butter cookies rise but only the tiniest bit.
Baking soda: you need both baking soda and baking powder to get the best texture.
Honey: these peanut butter cookies are only sweetened with just honey and chocolate chips (no coconut sugar!). If your honey is on the hard side make sure to warm it a bit.
Salt: salt is needed both for flavor but also for texture.
Chocolate chips: I use mini chocolate chips as they are distributed more evenly. Make sure to use paleo chocolate chips as you need them.
Avocado oil: this helps with the texture of the cookies so make sure not to sub for coconut oil.
How To Make Protein Cookies
- Preheat the oven to 325 degrees Fahrenheit.
- Whisk together the egg, peanut butter, oil, and honey until smooth.
- Add in the remaining ingredients.
- Mix until everything is combined (it will look dry).
- Portion the cookies out onto a baking sheet and bake for 15 minutes.
- Let cool on the tray.
