    Loaded with 19 grams of protein and made without banana, this protein-baked oatmeal is a deliciously festive way to kick off the morning.

    These high-protein baked oats can be prepped the night before and cooked in the morning (just like these candy cane overnight oats with protein powder).

    This means that you get to spend more time enjoying the moment on Christmas and less time in the kitchen- these cranberry maple chicken thighs work for this too!

    They have a chewy base with a sweet peppermint flavor and you can top them with your favorite whole30 whipped cream to make them more indulgent (or just enjoy these paleo candy cane donuts).

    Ingredients You’ll Need

    Though most protein-baked oatmeal recipes will call for bananas, you won’t find them here! These blended oats are sweetened with honey instead and are completely banana-free.

    Old fashioned rolled oats: make sure that they’re certified gluten-free if you need them to be. Unfortunately, quick oats and steel-cut oats don’t tend to work as well for this recipe. Learn more about different types of oats and how to use them.

    Egg whites: an added bit of protein but the egg whites also help hold the blended baked oats without banana together.

    Collagen powder: the secret in this baked oats recipe! Collagen powder is the cleanest source of protein you can choose!

    Baking powder: you want the protein baked oats to rise but not too much.

    Honey: this gives a bit of sweetness to the morning. Though maple syrup will work in its place, it will change the texture slightly.

    Peppermint extract: a little bit goes a long way so don’t overdo it!

    Hemp milk: any non-dairy milk will work for baked oats. We use homemade hemp milk or almond milk the most though.

    Crushed candy canes: candy canes, Christmas sprinkles, or both! Add in your favorite festive choice and watch the kiddos' eyes light up in the morning.

    How To Make Baked Oats Without Bananas

    There are actually two different ways to make this baked oats recipe. The instructions below go over how to make them in a loaf pan.

    Step 1: In a blender, combine all the ingredients except the candy canes.

    Step 2: Process for 1-2 minutes.

    Step 3: Pour the mixture into a lined loaf pan and sprinkle in some crushed candy canes. Swirl with a fork.

    Step 4: Bake in the oven for 40-50 minutes. Let cool slightly and top with your favorites.

    Important Teaching Tips

    These high-protein baked oats are made without bananas which means that they’re sweet but not too sweet. Likewise, bananas tend to thicken the oats. These blended baked oats are light but chewy instead of thick or creamy.

    Not all the oats will blend when you process them- that’s okay! Just make sure to distribute the mixture evenly so one is not all liquid and the other all oats.

    You know the baked oats are done when you insert a toothpick into the middle of them and it comes out almost clean.

    To meal prep the recipe: blend the protein-baked oats ingredients, get them into the baking loaf and mix in your candy canes. Then, pop it in the fridge overnight. In the morning, let them sit at room temperature for a few minutes before baking.

    Love the recipe but don't want to make it Christmas-themed? Opt for regular sprinkled or chocolate chips in place of candy canes!

    If making these baked oats in a loaf pan, make sure to line it first otherwise they will stick.

    If making this baked oats recipe and portioning them into silicone molds so that everyone can top their own, you will only need to bake them for 20 minutes.

    Topping The Oats

    The protein-baked oats without bananas are delicious just as they’re made.

    Can mix whey protein powder into baked oatmeal?

    Though whey protein powder may be able to be subbed in for the collagen powder it may alter the texture a bit. Know that vegan protein powder can definitely not be used as it absorbs too much liquid.

    What do I do with leftovers?

    If you have leftover baked oatmeal you can store them in an airtight container in the fridge. When you reheat them, do it on the stove and add a bit more milk to them so they don’t dry out. Or, pop the leftovers into a smoothie to make it extra thick!

    Ingredients
      

    • 1.25 cups rolled oats
    • ⅓ cup Egg whites
    • ¼ cup Collagen powder
    • ¼ cup Honey
    • ½ cup Hemp milk or almond milk
    • 1 teaspoon Baking powder
    • ¼ teaspoon Peppermint extract
    • 2 large Candy canes crushed
    • 1 tbs Sprinkles optional

    Instructions
     

    • Preheat the oven to 350 degrees Fahrenheit
    • In a blender, combine all the ingredients except the candy canes.
    • Process for 1-2 minutes.
    • Portion out the blended baked oats mixture a lined 8.5 x4 inch loaf pan.
    • Stir in the crushed candy canes and sprinkles.
    • Bake for 40-50 minutes keeping an eye on it at the end.
    • Remove them from the oven and let it cool for five minutes before slicing and topping with your favorite whipped cream or nut butter and enjoy!

      With alpha-gal syndrome, I cannot consume any mammalian products, so I'm always looking for good sources of protein that work for my food allergy.
