I originally made the bars with my nut-free granola recipe (which is also grain-free). I have also made with crunchy homemade granola. They’re delicious either way, but the texture is slightly different.
You only need eggs and either some chocolate chips or dried fruit for the grain-free granola bars to come together.
Expert Tips
If your granola is softer, the bars will have a chewier texture. If your granola is crisp or crunchy, your bars will also be.
Adding either chocolate chips or dried fruit to the mix just helps combine the homemade granola with the eggs and bulk it up a bit.
The granola bars will look soft coming out of the oven and be very delicate. Let them cool fully before you slice them.
How To Make Grain-Free Granola Bars
Step 1: In a large bowl, combine all the ingredients.
Step 2: Mix until sticky and portion into a lined loaf pan.
Step 3: Bake for 21-25 minutes and let cool fully in the pan before slicing.
How To Store Them
Homemade, grain-free granola bars are best stored in the fridge for 5-7 days. They will firm up a bit if your granola is oil-based, which also helps the hold together well.
Granola bars can also be stored in a freezer-safe bag for up to 2 months. When you’re ready to enjoy them, let them thaw fully in the fridge overnight. I do find that they don’t hold together as well once thawed as they did originally. Still delicious though.
Flavor Variations
There are multiple ways you can adjust the flavor of the gluten-free granola bars to suit your preferences. Below are a few easy ways.
Dried fruit: Switch up the fruit for different flavors. Just make sure if you’re using bigger fruits, to chop them into smaller pieces.
Spices: Adding some extra cinnamon, nutmeg, or vanilla extract brings out a whole new warming flavor.
Chocolate chips: This always makes it feel more indulgent, but you could also use white chocolate chips if you wanted to.
FAQ's
Given that these granola bars are egg-based they're best stored in the fridge. They cannot be stored in the fridge because they don't thaw well. In the fridge, they maintain a chewy, nutty consistency that makes them perfect.
Many granola bars contain oats, which can be a problem for celiacs. Double-check that you are using gluten-free certified oats when you make granola bars.
I found that using store-bought granola worked just fine, but you need to keep a close eye on baking. If it contains nuts, make sure they’re toasted and not burnt. If it contains grains, you want to make sure it’s a sticky batter before baking.

- 2.5 cups Nut and grain-free granola room temperature or cooled
- ⅛ Cup Dairy-free chocolate chips or dried fruit
- 2 Eggs
Instructions
- Preheat the oven to 350 degrees. In a large bowl, mix together the ingredients until sticky.
- Line an 8x4 loaf pan with parchment paper and pour the granola mix into it. Smooth it out and press down so that there's no air pockets.
- Bake for 21-25 minutes until mostly cooked. It will look underdone coming out of the oven but firms up on cooling.
- Let the granola bars cool completely before slicing them.
