    Gluten-Free Chocolate Protein Donuts

    Learn how to make gluten-free chocolate protein donuts and start ENJOYING snack time! These protein donuts are chewy, filling, and the perfect way to kickstart your day or fuel up post-workout. With 12 grams of protein per donut, this snack is one you’ll want to make over and over again.

    Upping your protein intake doesn’t have to be hard. Keep a stash of donuts on hand and you’ll never look back!

    Trying to keep your protein intake high but sick of eating the same old things (hello chicken, beef & eggs!)?. Not to worry, this is one of those situations in which you can have your cake and eat it too!

    These double chocolate protein donuts are made with ingredients you already have on hand (assuming you have a well-stocked, gluten-free pantry) and they’re easy to whip up.

    They come out chewy and delicious and can be used as a quick munchy snack or post-workout fuel.

    Ingredients You’ll Need

    Chocolate Protein Powder: this donut recipe uses vegan chocolate protein powder for the base know that kind of protein powder you choose will determine the texture and flavor of the Donuts fermented vegan protein powders especially tend to absorb a little bit more liquid than others.

    Gluten-Free 1:1 Baking Flour: make sure to use baking flour and not all-purpose as these flours do absorb differently.

    Peanut Butter: any nut butter can be used in place of peanut butter but the chocolate peanut butter combo is a classic in my opinion

     Cacao powder: cocoa powder can be used but there are some slight differences between cacao and cocoa powder. Know that your Donuts will be more nutrient dense if you opt for cacao powder.

    Unsweetened Applesauce: this is a crucial ingredient to keep the chocolate donuts a little bit squishy and not dense and chalky. Make sure to grab unsweetened applesauce so you don't amp up the sugar in the donuts.

    Vanilla Stevia: this is a crucial one to give the chocolate donuts a little bit of sweetness without a lot of calories. If you cannot get your hands on vanilla stevia specifically obviously you can use vanilla extract and then a few stevia drops. However the vanilla stevia from new naturals it makes a really big distance difference to the flavor.

    How To Make Chocolate Protein Donuts:

    1. In a mixing bowl combine the dry ingredients and mix well.
    2. One by one add in the wet ingredients.
    3. Mix until combined and thick.
    4. Fold in the chocolate chips.
    5. Portion into a greased donut pan and form the batter.
    6. Bake for twenty minutes and let cool briefly in the pan.

    Important Teaching Tips

    It's really important to make sure your donut pan is really really well greased or use a silicone donut mold. We love this silicone mold for the protein donut recipe in which case you want to let them cool fully in the donut pan and then take care to pop them out to keep their shape intact.

    This is because the chocolate protein donuts will stick a little bit once they are baked it makes it tricky to get out if you haven't greased the pan.

    When it comes to nut butter you want to make sure that you're using fresh, natural nut butter that's a little bit more on the runny side. This is going to help the batter come together a little bit easier than if you were to use an older butter where the bottom is kind of hard.

    When you portion the batter into the donut tray it is really thick and kind of sticky. So you're going to have to form the chocolate protein donuts yourself with the silicone spatula.

    Know that the sprinkles are not included in the nutritional breakdown.

    Know that each protein powder has a little bit of a different breakdown and thus is going to affect in the recipe a little bit differently.

    This protein donut recipe was initially made with Genuine Health Fermented chocolate protein powder which works amazingly. However, it will result in thicker Donuts.

    If you were using a vegan protein powder that is not fermented or not pea protein based, your chocolate protein donuts will come out a little bit lighter. Unfortunately, you cannot substitute whey protein powder in this recipe

    How do you store oven-baked protein donuts?

    You'll want to store these protein donuts in the fridge because they do contain eggs. However no that the donuts will thicken up slightly when they are chilled, and they are best eaten at room temperature. So when you know you were going to grab a protein donut just take it out of the fridge let it sit at room temperature for about 10 minutes and then eat when you're ready for it.

    Can you freeze these protein donuts?

    Unfortunately, these chocolate protein donuts do not freeze well. This is because when coming out of the freezer they end up a bit too thick.

    Ingredients
      

    • ⅓ cup Vegan chocolate protein powder
    • ½ cup Gluten-free 1:1 Baking flour
    • 1 tbs Gluten-free 1:1 Baking flour
    • ½ cup Almond flour
    • ⅓ cup Peanut butter
    • 2 tbs Avocado oil 1
    • 1 Egg
    • 1 teaspoon Baking powder
    • ½ cup Unsweetened almond milk
    • 1 tbs Cacao powder
    • ¼ cup Applesauce
    • ¼ cup Maple syrup
    • ½ teaspoon Vanilla stevia
    • 2 tbs Sprinkles or Chocolate chips Optional

    Instructions
     

    • Preheat the oven to 350 degrees Fahrenheit.
    • In a large bowl, mix together the flour, protein powder, baking powder, and cacao powder.
    • In another bowl, whisk the eggs with the rest of the wet ingredients.
    • Pour the wet ingredients into the dry ingredients and mix well.
    • Portion the protein donuts mixture using a silicone spatula into a donut pan. Top with sprinkles or chocolate chips if using.
    • Bake in the oven for 20 minutes and let cool slightly in the donut pan before removing them gently.
