    Deliciously simple to make these almond flour oat pancakes have a whopping 16 grams of protein. Made with easy ingredients and with a comforting cinnamon apple flavor, they're a tasty dairy-free breakfast to enjoy any day of the week.

    Easy to make: You only need a handful of ingredients and you probably have most of them in your Pantry Staples.

    Comforting: The gluten-free pancakes are flavored apple cinnamon for a fall comfort flavor you can't resist.

    Expert Tips To Make Them

    These almond flour pancakes don't have a binder in them in the way of traditional flour. To counter this, let them cook longer than you think before you flip them so that they hold together. Learn more about how to make protein pancakes so that you can make them PERFECT every time.

    Almond flour and ground almonds are not the same thing. Ground almonds will result in a grittier texture. Make sure to use blanched almond flour for most of your gluten-free almond flour recipes.

    Storing Them

    If you have leftover pancakes, let them cool fully before storing them in an airtight container in the fridge. Separate layers of pancakes with parchment paper so that they don't crumble together.

    In the fridge, they will last 3-4 days. Know that these gluten-free pancakes don't freeze as well as something like high protein waffles. Though you can try, they don't hold their texture together as well and often crumble a bit when you're trying to toast them.

    Variations

    Like any pancakes, these almond flour oat ones can be made into anything you want them to be.

    If you top them with something like dairy-free chocolate ganache and fresh fruit they're super indulgent. You can also change the flavor of the pancakes with some of the ideas below.

    Chocolate: Omit the cinnamon powder and add in one tablespoon of cacao powder instead.

    Fruity: Replace the cinnamon with vanilla extract and stir in some fresh berries chopped very small.

    Why are my almond flour pancakes falling apart?

    If the almond flour isn't mixed with a binder, the pancakes will fall apart. This recipe uses eggs and oats for that. The trick to ensuring they hold together though is letting them cook for longer than you think over low heat before you flip them.

    Ingredients
      

    • ½ cup Almond flour
    • ½ cup Oats
    • 1 teaspoon Baking powder
    • 0,5 teaspoon Cinnamon
    • 2 Eggs
    • 2 tablespoons Egg whites
    • 2 tablespoons Unsweetened apple sauce

    Instructions
     

    • Spray a pan with non-stick spray and heat over low to medium.
    • In a blender, process the almond flour, oats, and baking powder until desired consistency.
    • Pour the oat mixture into a bowl and mix in the remaining ingredients.
    • Portion the pancake batter into a greased pan taking care to shape each pancake with a silicone spatula.
    • Cook for 10-12 minutes uncovered until the edges are turning golden brown. Use a silicone spatula to flip them and cook until heated through.
    • Serve topped with maple syrup.
