    Expert Tips To Make It

    These almond flour pancakes don't have a binder in them in the way of traditional flour. To counter this, let them cook longer than you think (low and slow!) before you flip them so that they hold together.

    If you need these to be gluten-free, make sure to use gluten-free certified oats, as not all are. Learn about types of oats.

    When you mix the batter, let it sit for 2-3 minutes so that everything can absorb. They hold together better this way.

    Storing Them

    If you have leftover oat almond pancakes, let them cool fully before storing them in an airtight container in the fridge for 2-3 days.

    Separate layers of pancakes with parchment paper so that they don't crumble together. This is one of my favorite mom hacks and one I use in my Rise and Chill Breakfast E-Book.

    Do not freeze these pancakes as they crumble on thawing. Something like high-protein waffles is better for that.

    Why are my almond flour pancakes falling apart?

    If the almond flour isn't mixed with a binder, the pancakes will fall apart. This recipe uses eggs and oats for that. The trick to ensuring they hold together though, is letting them cook for longer than you think over low heat before you flip them.

    Can you freeze almond flour pancakes?

    Some almond flour pancakes can be frozen if they have flour or protein in them. These almond oat pancakes cannot be frozen as they don't thaw well.

    Are my almond flour oat pancakes gluten-free?

    So long as you use a certified gluten-free oatmeal, the pancakes will be gluten-free.

    Ingredients
      

    • ½ cup Almond flour
    • ½ cup Oats Make sure they're gluten-free
    • 1 teaspoon Baking powder
    • 0,5 teaspoon Cinnamon
    • 2 Eggs
    • 2 tablespoons Egg whites
    • 2 tablespoons Unsweetened apple sauce

    Instructions
     

    • Spray a pan with non-stick spray and heat over low to medium.
    • In a blender, process the almond flour, oats, and baking powder until desired consistency.
    • Pour the oat mixture into a bowl and mix in the remaining ingredients. Let it sit for 2-3 minutes.
    • Portion the pancake batter into a greased pan taking care to shape each pancake with a silicone spatula.
    • Cook for 10-12 minutes uncovered until the edges are turning golden brown. Use a silicone spatula to flip them and cook until heated through.
    • Serve topped with maple syrup.

    Notes

    These almond flour pancakes don't have a binder in them in the way of traditional flour. To counter this, let them cook longer than you think before you flip them so that they hold together.
    The chunkier you leave the oats, the chewier your pancakes will be.
    Almond flour and ground almonds are not the same thing. Ground almonds will result in a grittier texture.
    Try not to flip the pancakes until mostly cooked through. Low and slow is better.
    The recipe makes four pancakes, each serving is two pancakes.
