When it comes to the almond flour pancakes, you’re going to want to go with almond flour. The difference between the two is that the almond meal is quite literally, ground almonds. These almonds are not peeled and contain all of their nutrients. However, the almond meal tends not to bind as well as the flour. Likewise, my daughters think that topping pancakes are almost like a game because there are so many choices.
