Fluffy Almond Flour Pancakes Recipe (dairy-free)

Light, fluffy, and healthy this almond flour pancakes recipe makes the perfect breakfast! Whip up these almond flour pancakes for an indulgent weekend breakfast or have some on hand for quick mornings. These dairy-free pancakes are kid-approved and fluff up just like my high protein yogurt pancakes.

While most people think of pancakes as an indulgence (and they totally can be), in our house they’re a breakfast staple. Once you master making pancakes somewhat healthy they become a lot of fun!

This almond flour pancakes recipe is actually one of the first pancake recipes I’d ever made. I have been eating them for almost ten years now and oddly enough they were one of my daughter’s first foods (by accident- she grabbed them off my plate!).

When made with the right oat flour, these almond flour pancakes are dairy-free and gluten-free. What we love best about them though is how nutrient-packed they are (so they keep you full) and that they fluff up.

What’s In The Almond Flour Pancakes Recipe?

The ingredients in the dairy-free almond flour pancakes are simple. Obviously, almond meal is the main flour however there is oat flour in there to help them hold together also. 

If you need the almond flour pancakes recipe to be gluten-free, instead of purchasing oat flour it may be easier to just grind your own gluten-free oats. These almond flour pancakes do contain eggs to give them a bit more fuel but it’s the applesauce that makes them unique.

One thing I’ve learned about pancakes is that it can be tricky to get super fluffy and yummy pancakes on minimal ingredients. Adding in applesauce or yogurt solves that problem! They fluff right up and keep the pancakes moist instead of dry.

 

Can I Freeze These Almond Flour Pancakes?

No. While I am all about freezing pancakes (these gluten-free strawberry pancakes freeze best), because these dairy-free pancakes come out so fluffy they’re often ruined when frozen. When frozen they break apart from being re-heated leaving you with a huge mess.

However, they still work wonderfully as a make-ahead breakfast. Instead of freezing them, whip up a big batch and keep them in the fridge for the week. Then, pop them in the toaster to heat up. This way they warm up but don’t lose their light and fluffy-ness.

 

Almond Flour Versus Almond Meal

When it comes to the almond flour pancakes, you’re going to want to go with almond flour. The difference between the two is that the almond meal is quite literally, ground almonds. These almonds are not peeled and contain all of their nutrients.

However, the almond meal tends not to bind as well as the flour.

Almond flour is made by blanching the almonds and removing the peels (learn more about the difference between the two)

 

Topping The Dairy-Free Pancakes

Topping pancakes is always the best! Likewise, my daughters think that topping pancakes are almost like a game because there are so many choices. Our favorite way to indulge with pancakes include some of the following toppings:

  • any and all kind of berries
  • maple syrup (obviously)
  • coconut whip cream
  • nut butter

Much of this depends if you’re rushing out the door or if you have time to sit and really enjoy your pancakes. Regardless, they taste delicious with everything!

Ingredients For The Almond Flour Pancakes Recipe

  • almond meal
  • oat flour (if gluten-free, grind your own!)
  • baking powder
  • cinnamon
  • eggs
  • egg whites
  • unsweetened apple sauce
  • almond milk

Easy, Fluffy, Almond Pancakes (dairy-free)

Light, fluffy, and healthy this almond flour pancakes recipe makes the perfect breakfast! Whip up these almond flour pancakes for an indulgent weekend breakfast or have some on hand for quick mornings.

Ingredients

  • 2 cups almond meal
  • 3/4 cup oat flour
  • 1.5 tbs baking powder
  • 1 tsp cinnamon
  • 2 eggs
  • 3/4 cup egg whites
  • 1/2 cup unsweetened apple sauce
  • 2 tbsp almond milk

Instructions

  1. Spray a pan with non-stick spray and heat over medium. Combine all ingredients in a large bowl and whisk until mixed.

  2. Pour batter into pan in pancake form pressing down as needed to make them even.

  3. Cook covered for 6-8 minutes or until mostly heated through. Flip and finish cooking until golden brown.
  4. Top with maple syrup and berries!

Recipe Notes

Tip: Let the edges of the pancakes get nice and golden brown before flipping. It keeps them soft!

The recipe makes 8 super thick fluffy pancakes or 9-10 smaller ones. Nutrition is based off nine pancakes.
