    Healthy Coconut Macaroons Recipe (Energy Boosting, Paleo, Vegan)

    Looking for something sweet that won't derail your healthy eating goals? These healthy coconut macaroons are packed with flavor and fuel! They're soft, dipped in chocolate, and in addition to the healthy fats, they also contain a secret energizing ingredient.

    Don't you hate when people tell you that you can't have your cake and eat it too? Because frankly, cake is delicious.

    And as a Certified Nutrition Coach, I have found that giving my clients healthier alternatives to their cravings is a great way to keep them on track with their goals without anyone feeling like they're only eating chicken and broccoli.

    These healthy coconut macaroons are the bridge that helps busy moms stay alert and indulged, without blowing their calories on sugar.

    Why You'll Fall In Love With This Recipe

    • Dipped in chocolate

    Ingredients You'll Need

    You can skip the almond flour and even sweetened condensed milk for this recipe. These coconut macaroons were made for busy moms.

    Thus, they have minimal ingredients and there are no fancy techniques required.

    Shredded coconut: the finer the coconut is shredded the better the coconut macaroons hold together. Likewise, if you opt for sweetened coconut the flavor will be sweeter overall. I prefer to use unsweetened coconut to cut out added sugars.

    Egg whites: I used the egg whites from a cartoon but I assume fresh egg whites would work just as well!

    Maple syrup: opt for real Canadian maple syrup as it gives a better flavor than the man-made stuff.

    Vanilla extract: any you have on hand will work. For desserts, I like to use Madagascar vanilla extract when I can because the flavor comes out much more.

    Coconut flour: this helps bind the coconut macaroons together so they don't crumble.

    Matchinga powder: the secret ingredient for maximum energy. Matchinga is a powerhouse when it comes to increasing alertness (learn more about the health benefits of moringa which is part of the powder).

    There are two different ways to make the chocolate sauce for the bottom, so you may need extra ingredients for that (more on that below).

    How To Make Them

    1. In a medium bowl, combine the coconut, matchinga powder, and coconut flour.
    2. In a small bowl, whisk the egg whites, syrup, and vanilla extract.
    3. Pour wet into dry and mix until combined. Let sit at least five minutes.
    4. Use a trigger scoop to portion them onto a baking tray.
    5. Bake for 10 minutes, rotate the pan, and bake for another three minutes.
    6. Remove from the oven and let cool on the pan for at least thirty minutes
    7. While cooling, make the chocolate sauce.
    8. Line a cutting board with parchment paper and very carefully (use a fork or a spatula) place each macaroon into the chocolate sauce to coat the bottom and part of the sides.
    9. Then, remove the macaroon and place on the parchment paper. When all of them have been dipped, place the board in the freezer to firm up the chocolate for 30 minutes.
    10. When ready to eat, remove from the freezer and let thaw.

    The Secret Energizing Ingredient

    This coconut macaroon recipe also has another secret ingredient. One that Chris Beat Cancer mentions as one of the top superfoods on the planet.

    Matchinga!

    Matchinga is a combo of Matcha green tea and a superfood called Moringa.

    Matcha by itself is a natural way to increase energy. Likewise, it’s also recognized for a few other amazing benefits (it’s high in antioxidants, it can help boost your metabolism, your immune system etc).

    Similarly,  moringa has long been touted for its powerful nutrition properties. This amazing superfood has even been said to lower blood sugar levels, reduce inflammation, lower cholesterol and boost antioxidant content.

    This means that this superfood helps:

    •  boost energy
    • fight inflammation
    • contains an insane amount of antioxidants

    And while this powder is quite easy to add into a smoothie or whisk up into a latte. I obviously thought it would be fun to put it into something a bit sweeter- a healthy macaroons recipe!

    Important Teaching Tips

    The coconut macaroons are not firm coming out of the oven. Let them sit at room temperature for at least thirty minutes for them to firm up.

    This recipe was originally made with a very delicious chocolate sauce. However, it made it so there were extra ingredients. You can either use the original chocolate sauce recipe (below) which does add a blend of healthy fats or just melt ½ cup of mini chocolate chips with 1 teaspoon of coconut oil and use that.

    Or, you can skip the dipping and just drizzle on some dairy-free chocolate ganache. You can also topp them with slivered almonds for a nice crunch just like this traditional, almond macaroon cookie recipe.

    The Original Chocolate Sauce

    • 3 tablespoons coconut oil measured solid
    • 3 tablespoons maple syrup
    • 1 tablespoon cacao powder
    • 2 teaspoon nut butter
    • 2 tablespoons cacao butter

    In a small sauce pan, heat the coconut oil, maple syrup, and cacao butter over low heat until just melted.

    Stir in the nut butter and cacao powder until smooth.

    Frequently Asked Questions About Healthy Coconut Macaroons

    Can I make energy-boosting macaroons without matching?

    Of course! This healthy coconut macaroons recipe is still delicious without the green powder. However, it obviously won't give you the energy-boosting aspect. That said, given that Matchinga does contain caffeine, making the vegan macaroons without it makes a tasty treat more geared towards kids.

    How do you store coconut macaroons?

    Store the coconut macaroons in an airtight container in the fridge. They can be left out at room temperature for a little while (maybe an hour?). However, they become a little soft. I personally store my macaroons in the freezer and then just let them thaw on the counter for when I need them. So, that works too!

    Other Ways To Use Matchinga

    Instructions

    • Then, pack the mixture into an ice cream scoop tightly (otherwise the macaroons will crumble) and portion them out onto a lined baking sheet.Bake for 10 minutes, rotate the pan and bake another three minutes.

    • Remove from the oven and let cool on the pan for at least thirty minutes
    • While cooling, heat the coconut oil, cacao butter and syrup in a small pot on low heat. Once coconut oil is melted, whisk in the nut butter and cacao powder until smooth.
