    If you struggle to hit your protein goal by the end of the day, lunch is usually where things fall apart. One of the easiest strategies I teach clients is to build a high-protein lunch bowl using leftovers from dinner instead of starting from scratch every day. Pair that with one of my protein shake recipes for energy at breakfast and you've already covered a huge chunk of your daily protein needs before dinner.

    STOP thinning in terms of meals (I need to make meatloaf, chicken alfredo etc and think of things in throw-together bowls). A little leftover chicken, air fryer steak bites with soy sauce, or roasted root vegetable medley can quickly turn into a filling meal that supports your goals and helps you reach 100 grams of protein per day (learn more in the Protein Playbook).

    The protein bowl is super versatile. Swap the protein, grains, or vegetables based on what you already have in the fridge, then finish it with easy sauce. It's the same mindset I use try to drill down when teaching how to make meal prepping easier. Simple ingredients, less food waste, and meals you'll actually look forward to eating.

    What Makes It Different From Other Lunches

    Protein: There is a whopping 50 grams of protein in this bowl, which means that half your daily intake (if you’re striving to eat 100 grams of protein per day) is done.

    Made from leftovers: You don’t really need to cook anything new for this bowl. You just need to ensure that when you cook dinner, you’re double-batching so that you have extra. From there, it’s a throw-together.

    Allergy-friendly: It’s high in protein, but it’s also dairy-free and gluten-free.

    The biggest perk of a lunch like this is that you're actually FULL, which means you're far less likely to spend the afternoon grazing or dealing with a 3 p.m. energy crash. And if you do need something later in the day, these healthy snacks for moms make great high-protein options.

    Ingredients and Substitutions

    Protein: This can literally be anything you have in the fridge. Much of the time, I make ground beef  in a crock pot and use that, but sometimes it’s spicy turkey meatballs, leftover chicken, or steak bites.

    Grain: If you watch the full video of this, you’ll notice I eat more grains/starch on workout days and less on rest days, so again, this bowl is variable. Roasted sweet potato is probably my favorite, but leftover rice, quinoa, or noodles work too. Just remember to check your portion sizes. It’s easy to go too big on this.

    Veggies: I have roasted vegetables in the fridge a lot from dinner. But raw vegetables work too if that’s what you’ve got. Literally use anything you have.

    Greens: Optional, but I like the bulk they add sometimes. If I’m heating this up, I omit them, though.

    Greek yogurt: I use a dairy-free Greek yogurt or sometimes a lactose free. it adds a bit of creaminess to the protein bowl.

    Sauce: Salad dressing, hot honey, mustard, all of it works, and it makes it easy to vary the bowl.

    Quick Flavor Variations

    Obviously, all parts of the bowl are up for exchange, but here are some quick ones:

    Mediterranean bowl: Add feta or another cheese as a healthy fat and use an olive oil, lemon kind of dressing on top (still with the yogurt).

    Buffalo: Add hot honey to your frizzle, it’s a game-changer.

    Texture: For a dose of healthy fats and texture, chopped nuts, hemp hearts, or pumpkin seeds can be mixed in.

    How To Meal Prep It

    The bowl can be made about 3-4 days in advance. To meal prep it, you’ll want to combine all your ingredients into a container except the yogurt and sauce. You can mix them up together or layer them; both work.

    Then, store your yogurt and sauce/drizzle separately. When you’re ready to enjoy the bowl, plop them on top, mix it up, and get eating!

    Quick Tips

    Don’t overcomplicate this. Honestly, the bowl is meant to be a simple, throw-together thing. Get used to non-structure.

    Prep in bulk. For this to work, you need extra cooked meat and sweet potato or rice in the fridge. Get in the habit of just adding this to dinner or finding a quick way of cooking it while you watch TV, etc.

    The lunchtime bowl is not pretty, but with the right flavors, it’s delicious. Don’t worry about pretty.

    It’s an easy lunch that actually keeps you full until almost dinner, making the three pm sugar snacks habit a bit more obsolete.

    What should a protein bowl include?

    A balanced protein bowl should include a lean protein source, a fiber-rich carbohydrate, plenty of vegetables, and a healthy fat. This combination helps keep you full, supports muscle recovery, and provides steady energy throughout the afternoon. Know that the amounts of each grouping though can be adjusted based on what each person needs. And if you find yourself struggling to hit your protein goal throughout the day, pairing a lunch like this with a few high protein snack recipes can make reaching 100 grams much easier without feeling like you're constantly eating.

    Is 50 grams of protein too much for one meal?

    It seems like a lot for sure. However, for most healthy adults (especially those who strength train with something like my 3-day dumbbell workout plan) fifty grams at once is absolutely fine. Eating a larger portion at once actually makes you less likely to continue snacking (healthy or otherwise) simply because you’re so full. However, you should always consult with your primary physician, especially if you have underlying conditions.

    • ¾ cup Ground meat
    • ⅓ cup Roasted sweet potatoes
    • ½ cup Veggies
    • ½ cup Leafy greens optional
    • 2 tablespoons Greek yogurt
    • ½ tablespoon Honey mustard
    • 2 tablespoons Chopped nuts

    Instructions
     

    • In a large bowl, combine or layer the ground meat, sweet potatoes, veggies, and leafy greens.
    • Plop a dollop of Greek yogurt into the middle and drizzle with honey mustard.
    • Mix it all together until creamy and sprinkle on some chopped nuts.

    Notes

    Remember, any and all ground meats or leftover chicken/steak/shrimp work for proteins. Sweet potatoes can be substituted for regular potatoes or rice.
    Check your portions. I do ⅓ cup cooked on non-workout days and maybe ½ cup on workout days.
    Chopped nuts can be replaced by a healthy cheese or avocado; just keep portions in check as calories add up quickly there. Any salad dressing, hot honey, or combo can be used for mustard.
    You don't NEED to make this bowl 50 grams of protein; you can easily scale it back if that's too much for you. Just cut down on the ground meat.
