This lunchtime protein bowl delivers 50 grams of protein using simple leftovers from dinner. An easy, customizable high-protein lunch for busy weekdays.

Ingredients

  • ¾ cup Ground meat
  • cup Roasted sweet potatoes
  • ½ cup Veggies
  • ½ cup Leafy greens optional
  • 2 tablespoons Greek yogurt
  • ½ tablespoon Honey mustard
  • 2 tablespoons Chopped nuts

Instructions

  • In a large bowl, combine or layer the ground meat, sweet potatoes, veggies, and leafy greens.
  • Plop a dollop of Greek yogurt into the middle and drizzle with honey mustard.
  • Mix it all together until creamy and sprinkle on some chopped nuts.

Notes

Remember, any and all ground meats or leftover chicken/steak/shrimp work for proteins. Sweet potatoes can be substituted for regular potatoes or rice.
Check your portions. I do ⅓ cup cooked on non-workout days and maybe ½ cup on workout days.
Chopped nuts can be replaced by a healthy cheese or avocado; just keep portions in check as calories add up quickly there. Any salad dressing, hot honey, or combo can be used for mustard.
You don't NEED to make this bowl 50 grams of protein; you can easily scale it back if that's too much for you. Just cut down on the ground meat.
