    We enjoy protein pancakes a few times a week in my house as there’s nothing cozier than a plate full of soft, fluffy, soaked in maple syrup goodness. More often than not, I make these sheet pan protein pancakes as meal prep for the kids and then something like 3-ingredient protein pancakes for myself. But more and more, my kiddo is whipping them up, and having pre-made pancake mix on hand is just easier.

    Except that the cost for healthy, dairy-free and gluten-free pancake mix is insane. And so, I’ve started making this high-protein pancake mix to have on hand for her. This protein pancake dry mix recipe has only 4 ingredients and makes for the FLUFFIEST, soft pancakes. Plus, with so many ways to adapt the base recipe, you can create a new breakfast each time you make them.

    Ingredients and Substitutions

    Baking powder, baking flour, collagen powder, and arrowroot powder in measuring cups and spoons.
    • Gluten-free baking flour: I use Bob’s Red Mills 1:1 Gluten-free baking Flour for this recipe, and the pancakes come out perfect each time. If you use another brand, the texture may be slightly different as each company uses a different flour blend.
    • Collagen powder: This is what gives the easy homemade pancake mix its punch of protein. Though lots of foods have collagen, the powder is one of my favorite ways to increase protein intake. If you don’t have any on hand, almond flour will work in its place, but obviously, it won’t be high in protein.
    • Arrowroot powder: Cornstarch should work just as well in its place.

    Flavor Variations

    Below are a few super-easy ways to vary the taste of the pancake mix before you store it, as well as a couple of delicious options for when you make it.

    • Spices: Add cinnamon, nutmeg, or pumpkin pie spice to the protein pancake mix for different flavors.
    • Chocolate: We make a lot of chocolate protein pancakes; just add 1.5 tablespoons of raw cacao powder to the dry mix.
    • Moistness: The recipe to actually make the protein pancakes uses applesauce for its fluffiness. Know that mashed banana or yogurt can be substituted and is an easy flavor change.
    • Add-ins: Obviously, as you’re making pancakes from scratch, you can add fresh fruit, chocolate chips, or chopped nuts to the pancake batter for new tastes.

    How To Make Homemade Protein Pancake Mix

    Step 1: Add all 4 ingredients to a large bowl and mix well.

    Expert Tips To Make It

    Collagen powder is what gives this pancake mix it’s hit of protein. Though vegan protein powder can’t be used because it absorbs too much liquid, you may be able to use beef protein powder instead (learn more about why I switched to beef protein for health reasons).

    The homemade protein pancake mix can be stored in a cool, dry spot in mason jars for up to 6 months.

    Once made, you can store protein pancakes in the fridge or freezer with layers separated by parchment paper and in an airtight container. When you’re ready to enjoy them, thaw the pancakes if frozen and then pop them in the toaster to heat.

    Know that there’s no sugar added to this pancake mix. I personally add in a splash of vanilla or maple syrup to the batter most days, but that’s a preference. If you want super-sweet pancakes, add 1-2 tablespoons of sugar. 

    How To Make Protein Pancakes with The Mix

    Making pancakes from the mix is ultra-easy, and you only need a few basic kitchen staples. Use the recipe below to whip them up.

    • ¾ cups of Protein pancake mix
    • 1 Egg
    • 2 tablespoons Avocado oil
    • ¼ cup Applesauce
    • 3 tablespoons Almond milk, optional

    Like any other pancake recipe, combine all the ingredients in a large bowl until smooth. Portion the pancakes into a pre-heated and greased pan and cook until the bottoms are golden. Flip the pancakes and cook for 1-2 more minutes.

    Note: The pancakes come out smaller but fluffier without almond milk added and the batch makes 5 small pancakes. However, they come out lighter and softer with the almond milk and make 6 small pancakes.

    How long does pancake mix last?

    When stored in a mason jar in a cool, dry place, homemade pancake mix will stay fresh for roughly 6 months.

    How to make pancake mix at home?

    To make pancake mix at home, combine baking flour, almond flour, arrowroot or cornstarch, and baking powder for the base. From there, you can add in a pinch of salt, as well as different seasonings.

    Is pancake mix just plain flour?

    No, pancake mix is not just flour. It also contains baking powder, sugar, and salt so that the pancakes rise up and have a subtly sweet flavor to them.

    What makes a pancake mix fluffy?

    Normally, the addition of baking powder and the way you stir the mix (to add air bubbles) make a pancake mix fluffy. However, I find that the secret to fluffy pancakes is to add applesauce or yogurt to the mixture. The result is ultra-fluffy pancakes, even when they’re gluten-free.

    • 2 cup Gluten-free 1:1 baking flour
    • ½ cup Collagen powder
    • 2 tablespoons Arrowroot powder
    • 2 teaspoons Baking powder

    • In a large bowl, combine all the ingredients together.
    • Mix until smooth so that the arrowroot powder is evenly distributed.

    Protein: These pancakes get their protein boost from collagen powder. Vegan protein powders don’t work well in this recipe because they soak up too much liquid. Beef protein powder may be a good alternative (here’s why I switched to beef protein).
    Storage: Store the dry pancake mix in a sealed jar in a cool, dry place for up to 6 months. Cooked pancakes can be stored in the fridge or freezer—just separate them with parchment paper in an airtight container. Reheat in the toaster when ready.
    Sweetness: This mix is naturally unsweetened. I usually add a splash of vanilla or maple syrup to the batter, but if you want sweeter pancakes, mix in 1–2 tablespoons of sugar.
    How to make pancakes: From the mix combine the following ingredients cook as you would any other pancakes.
    • ¾ cups of mix
