    Sugar-Free Carrot Muffins (dairy-free, gluten-free, healthy)

    Naturally sweetened, these sugar free carrot muffins make the perfect snack for kids! Sneak some extra veggies into their diet with a blend of the sweetness of carrots and the nutty flavor of almonds.

    It's no secret that as busy mom we often snack on the leftovers without making anything for ourselves.

    So if that's the case, let's make the leftovers healthy ones!

    As a Certified Nutrition Coach, I like whipping up a batch of these sugar free carrot muffinsfor my girls (and myself!) because they're:

    • Dairy-free and gluten-free
    • Naturally sweetened with dates and applesauce
    • Packed with healthy fats
    • Easy to make
    • A great way to sneak in veggies
    • Perfect for on the go, busy days

    Ingredients You Need

    Gluten free all purpose flour: each gluten-free flour is slightly unique in its blend and can affect the texture of the muffins.

    Almond flour: learn the difference between almond flour and ground almonds. If possible, use almond flour for a lighter taste.

    Bananas: the riper the better for more sweetness.

    Applesauce: opt for unsweetened applesauce if possible.

    Dates: dried, pitted dates are best. Soak them in warm water for 20 minutes and they're easier to blend.

    Egg: I don't believe that egg replacement will work.

    Spices: cinnamon, ginger, all spice, nutmeg for maximum comfort.

    Baking powder + baking soda: you do need both in this recipe to make sure the muffins rise.

    Coconut oil: measure it solid and then heat it to melt.

    Grated carrot: peel and finely grate the carrot so that it blends the best!

    How To Make Them

    1. Preheat the oven to 350F
    2. In a powerful blender, combine the bananas, dates, applesauce, all spices and melted coconut oil until creamy.
    3. In a large bowl, combine the flour, meal, baking powder, and baking soda.
    4. Pour the wet ingredients into the dry and mix.
    5. Stir in the grated carrots until everything is combined.
    6. Prep a muffin tray wit silicone muffin liners and portion out the batter evenly.
    7. Top each carrot muffin with chopped almonds.
    8. Bake for fifteen minutes, rotate the tray, and bake another 8-10 minutes or until cooked through.
    9. Remove from the oven and let the carrot cake muffins sit in the tray until fully cooled.

    Tips To Make Them

    All gluten-free flour blends have a different makeup. This healthy carrot muffins recipe was made with Cloud 9 Flour Other flour blends may alter the texture slightly.

    The carrot muffins are not overly fluffy but instead, they have a chewy, dense texture.

    Top the gluten-free muffins with chopped almonds for texture and sprinkled cinnamon if you like.

    Know that if you're making the carrot muffins for toddlers, it's best to omit the chopped almonds.

    Ingredients
      

    • 2 large very ripe bananas
    • 2 eggs
    • 8 dates
    • ¼ cup applesauce unsweetened
    • 0.5 tablespoon cinnamon
    • 1 teaspoon ginger
    • ¼ teaspoon all spice
    • ¼ teaspoon nutmeg
    • 3 tablespoons coconut oil
    • 1 cup all-purpose gluten-free flour cloud nine
    • ½ cup almond meal
    • 0.5 teaspoon baking powder
    • ½ teaspoon baking soda
    • 1 cup shredded carrot
    • 3 tablespoons almonds chopped for topping, optional

    Instructions
     

    • Preheat the oven to 350 degrees.

    • Top each carrot muffin with chopped almonds.

    • Bake the carrot cake muffins for 15 minutes, rotate the tray and bake another 8-10 minutes or until cooked through.
    • Remove from the oven and let sit in the tray until fully cooled.

        It's a tasty one! Hrm.. gluten free. Normally I'd go with oat flour but spelt is more binding so you can't directly swap. perhaps a combination of oat flour and 1-2 tablespoons of coconut flour would do the trick!

      Adding this to my list of upcoming freezer meals to make before baby #2 arrives! I also just saw that they have large amounts of dates (for cheap) at Costco. Do you freeze them if you buy them in large batches?

        Ahh congrats! I did a HUGE stock up for both my pregnancies- so helpful! I don't freeze them, just keep them in an air tight container in my cupboard 🙂 Given, mine don't last longer than a month because we make a freakish amount of energy balls but I'd just leave them 🙂
