Ingredients and Substitutions

- Gluten-free bread: Any gluten-free bread you have on hand should work. This particular high-protein French toast recipe was made with thin slices, though ( as was this crockpot French toast casserole).
- Collagen powder: This is one of the purest sources of protein and a great one to mix into to any breakfast recipe. Learn more about how collagen powder differs from protein powder.
- Unsweetened almond milk: Any dairy-free milk will work, we use homemade hemp milk the most.
See the recipe card for full information on ingredients and quantities.
Flavor Variations
Extracts: Change the flavor of the recipe by adding almond or rum extract to the mix for a punch of warmth.
Chocolate: Add some raw cacao powder to the mix (maybe skip the cinnamon) for a dark chocolate flavor. You could press in some chocolate chips before flipping the French toast, too.
How To Make Protein French Toast

Step 1: In a large bowl, whisk together the eggs, milk, maple syrup, and vanilla.

Step 2: Add the cinnamon and collagen powder and mix as well as you can (it won't combine completely, it's okay).

Step 3: One by one, dip the gluten-free bread into the egg mixture, coating both sides. Place each piece of bread into the heated pan to cook.

Step 4: Flip the protein French toast bread when the bottom is golden brown and no wet spots remain. Cook until it’s firm and no damn or egg spots remain.
Expert Tips
The collagen powder doesn’t like to whisk into eggs. So, make sure to whisk it in quickly and press down and break up any remaining chunks of powder.
Top the anabolic French toast with your favorites like dairy-free butter, maple syrup, and berries.
Though you may be able to use protein powder in place of collagen for this French toast, it would have to be whey protein powder or beef-based protein powder, as it would blend the best. Vegan protein powder absorbs too much liquid.
I use Perfect Supplements Collagen Powder for this recipe because it's of such good quality. You can learn more about what is collagen powder as well as the difference between collagen and bone broth. But know that this brand has the market. Use code mamabear10 to save yourself some money if you try it.
Easy to mix, this collagen powder adds a protein punch to anything you pair it with. Made from pasture-raised (grass-fed) cows there are no pesticides, hormones, or filler agents. Just put collagen protein. Use code mamabear10 to save money on your next order.
How To Meal Prep It
You can actually make this gluten-free protein French toast in advance! Follow the directions and cook the toast through. Store it in a container in the fridge for up to 2 days.
When you want to eat it, simply pop each piece in the toaster until warmed through but not getting crispy. Likewise, freeze the French toast on parchment paper for up to 2 months.
Making It For Brunch
Nothing screams amazing host better than a French Toast brunch buffet, or something like baked apples with oats and pecans, or this breakfast chia pudding parfait.
Whip up a few batches of the recipe and then have a “bar” with any or all of the toppings below. Then, have everyone dress up their own high-protein French toast for an indulgent mid-morning kickoff.
- Dairy-free coconut milk caramel sauce
- Whole30 whipped cream
- Dairy-free chocolate glaze
- Fresh fruit
- Toasted pecans
Protein French Toast FAQs
Not all protein powders can be used to replace collagen powder. With this recipe, it cannot be interchanged very well. Protein powder absorbs much more than collagen, so it’ll end up with a very dry mixture. If you're going to try, you'll want to use whey protein powder or beef protein powder, and you may need a splash more liquid.
Naturally, the eggs and egg whites in French toast provide a good dose of protein. You can increase this dose, though, by adding something like collagen powder to the recipe
It depends on your personal goals and macronutrient breakdown. In general, French toast isn’t great for weight loss, as your body does better with a really high-protein meal in the morning to wake it up.
You can add protein to French toast by adding egg whites, Greek yogurt, or protein powder to the batter.
