💭Why You'll Love This Recipe
Easy to make: You only need a handful of ingredients, and you probably have most of them in your gluten-free pantry Staples.
Texture: The healthy almond and oat flour pancakes are soft on the inside with a light crisp on the outside.
Versatile: They're easy to adjust in flavor so that they can be exactly what you want.
Ingredients and Substitutions

- Almond flour: Do not use ground almonds here, or you'll have a grittier texture. Learn more about almond flour vs ground almonds.
- Applesauce: Opt for unsweetened if possible so that you can control the sugar. This helps keep pancakes fluffy, but can be replaced with dairy-free yogurt (like in these Greek yogurt pancakes) or mashed bananas.
- Egg whites: Gives an extra punch of protein to the pancakes. Use the ones from a carton for best results.
See the recipe card for full information on ingredients and quantities.
Flavor Variations
Like any pancakes, these almond flour oat ones can be made into anything you want them to be.
If you top them with something like dairy-free chocolate glaze and fresh fruit, they're super indulgent. You can also change the flavor of the pancakes with some of the ideas below.
- Chocolate: Omit the cinnamon powder and add one tablespoon of raw cacao powder instead.
- Fruity: Replace the cinnamon with vanilla extract and stir in some fresh berries, chopped very small.
- Chocolate: Always a hit with kids, add some mini dairy-free chocolate chips to the mix for gooey bursts.
How To Make Oatmeal Almond Flour Pancakes

Step 1: Combine all the dry ingredients into a bowl before mixing in the wet ingredients.

Step 2: Use and ice cream scoop to portion out the oat pancakes.

Step 3: Let the pancakes cool almost fully before flipping them.

Step 4: Top them with maple syrup and enjoy.
Expert Tips To Make It
These almond flour pancakes don't have a binder in them in the way of traditional flour. To counter this, let them cook longer than you think (low and slow!) before you flip them so that they hold together.
If you need these to be gluten-free, make sure to use gluten-free certified oats, as not all are. Learn about types of oats.
When you mix the batter, let it sit for 2-3 minutes so that everything can absorb. They hold together better this way.
Storing Them
If you have leftover oat almond pancakes, let them cool fully before storing them in an airtight container in the fridge for 2-3 days.
Separate layers of pancakes with parchment paper so that they don't crumble together. This is one of my favorite mom hacks and one I use in my Rise and Chill Breakfast E-Book.
Do not freeze these pancakes as they crumble on thawing. Something like high-protein waffles is better for that.
Oatmeal Almond Flour Pancakes FAQ's
If the almond flour isn't mixed with a binder, the pancakes will fall apart. This recipe uses eggs and oats for that. The trick to ensuring they hold together though, is letting them cook for longer than you think over low heat before you flip them.
Some almond flour pancakes can be frozen if they have flour or protein in them. These almond oat pancakes cannot be frozen as they don't thaw well.
So long as you use a certified gluten-free oatmeal, the pancakes will be gluten-free.
